Sweet Potato Breakfast Casserole
Some mornings call for breakfast casseroles. Today was one of those mornings.
Typically on Sunday nights I pour a lot of time into meal prepping for the week, but last night I was drained, exhausted, and frankly I just didn’t feel like it.
So after a long, somewhat rested night, I devoted 15 minutes of my morning to prepping breakfast for the week.
It turned out as good as I imagined. I hope you enjoy it!
Ingredients:
3 medium/large sweet potatoes, diced
6 whole eggs + 6 egg whites
3 c chopped spinach
4 small sweet peppers, chopped
1/2 c cherry tomatoes, sliced
1 tsp Italian seasoning
1 tsp paprika
Sea salt & black pepper to taste
Directions:
Grease a 13×9 glass baking dish with 2 tsp EVOO. Dice sweet potatoes and place in dish. Cover with remaining veggies.
In a bowl, whisk eggs & egg whites. Add seasonings. Pour over veggie/potato mixture. Bake at 350* for 30-40 minutes until toothpick comes out clean.
Serve and enjoy.
Makes 6 (big!) servings.
