    Sweet Potato Breakfast Casserole

    Some mornings call for breakfast casseroles.  Today was one of those mornings.  Typically on Sunday nights I pour a lot of time into meal prepping for the week, but last night I was drained, exhausted, and frankly I just didn’t feel like it.  So after a long, somewhat rested night, I devoted 15 minutes of my morning to prepping breakfast for the week.   It turned out as good as I imagined.     Breakfast Quiche- Whole 30 Approved

    Kid Favorite Mini Muffins

    A super simple breakfast and snack muffin recipe that can be whipped up quick is a lifesaver!  We baked these the other night for breakfasts and snacks!  They’re clean/healthy and nutritious too and perfect for those busy back to school mornings or afternoon snacks!  Kid Favorite Blueberry Muffins: Ingredients: 1.5 c quick cook oats 1/2 c whole wheat or almond flour  1 tsp baking powder 1/2 tsp cinnamon 1 large mashed banana  1 c vanilla unsweetened almond milk  1/4 c honey 1 egg, beaten  1/2 c blueberries (or chopped strawberries, blackberries, or 3 tbsp chocolate chips! 😉) Pinch of sea salt  Directions:  Mix everything together in a bowl.  Spoon by…
