The BEST Breakfast Wrap!

Mushrooms… yay? Or nay?

I’m a total yay. In my eggs, soup, on my pizza. In tacos- y’all Mission Taco Joint has THE BEST portobello mushroom tacos! I’m a sucker for all things mushrooms.

So to add them into a breakfast wrap to give it a bit more of a punch, this is my jam!

Powerhouse of flavor. Delish combination. 2 servings of veggies in each wrap. And a treat for your savory taste buds!

Recipe below!

Ingredients:

1 whole egg, 2 egg whites
2 tsp butter olive oil (I use Olivino Tasting Bar’s)
1 whole grain wrap/tortilla (I prefer Mission organic)
2 tbsp chopped white onion
1 c chopped baby portobellos
1 c arugula or mixed greens
1 tbsp balsamic vinegar (again, Olivino)
Dash of sea salt, black pepper, and parsley
Everything but the bagel seasoning to taste

Directions:

Sauté egg and 1 tsp of olive oil in skillet. Add seasonings to taste. Remove from skillet and place on wrap. In skillet, add olive oil, onion, and mushroom. Sauté for 2-3 minutes. Add balsamic and seasonings. Cook for another 2-3 minutes. Place atop eggs. Top with greens. Enjoy!
