Baked Oatmeal Berry Breakfast Casserole

When you’re trying to get three kids ready in the morning, get yourself ready, get your husband ready, pack lunches, change the baby, an easy breakfast is a must.  This is a super simple, super flavorful, and super healthy one dish breakfast that the whole family will love.  Something for everyone, blueberries, oats, strawberries, and chocolate chips!  Enjoy!

Baked Oatmeal Berry Casserole

Cook time:  40 mins
Total Time: 50 Minutes 
Serves: 8
Ingredients
  • 2 Cups All Natural Oats
  • 1/4 Cup Coconut Sugar (can substitute Brown Sugar)
  • 1 tsp Baking Powder
  • 1 tsp Cinnamon
  • ½ tsp Sea Salt
  • ½ Cup Dark Chocolate Chips
  • 1 Cup Diced Strawberries
  • ⅔ Cup Blueberries (divided) 
  • 2 Cups Vanilla Unsweetened Almond Milk 
  • 1 Large Egg
  • 2 Tbsp Melted Butter (cooled) 
  • 1 tsp Vanilla
Directions
  1. Preheat oven to 375 degrees.
  2. Spray a 9×9 casserole dish generously with cooking spray.
  3. In a large bowl, mix oats, coconut sugar, baking powder, cinnamon, sea salt,  chocolate chips, and half of the berries. Stir well and pour into casserole dish. Add the other half of the berries on top.
  4. In a separate bowl, combine almond milk, egg, butter, and vanilla. Whisk thoroughly. Pour on top of oatmeal mixture, making sure the all oats are evenly soaked.
  5. Bake for 30 minutes.  Let cool for 10 minutes.  Spoon into bowls.  Top with additional fruit if desired or lowfat Greek yogurt!
