    Chunky Chicken Tortilla Stew (Crockpot & Instant Pot)

    You can’t spell Taco Tuesday without “YES” or “EAT”… And when my picky kids EAT chicken chili that’s loaded with veggies, it makes this momma say, “YES!” This can be done in the crockpot or in the Instant Pot- depending on what you have time for. Personally I fixed this in the slow cooker on a lazy Sunday and the house smelled amazing. I’ve included the Instant Pot directions below too.     Seven Layer American Flag Dip

    Every patriotic summer barbeque calls for a seven layer dip!  And this is one of our favorites! Super simple.  Healthier alternative than most.  And great for dipping chips or veggies too!   Ingredients:  1 tub plain Greek yogurt 2 cans refried beans (I used organic vegetarian) 1 16oz jar of salsa Shredded romaine lettuce Black olives, sliced Roma tomatoes, finely diced Taco flavored shredded cheese Blue corn tortilla chips Directions:  In a 13×9 baking dish, spread refried beans evenly across pan.  Top with layer of salsa- 3/4- 1 c.  Add layer of sliced black olives.  Top olives with shredded lettuce then shredded cheese.  Dice Roma tomatoes, set aside.  Spoon Greek…

    Sweet Potato Breakfast Casserole

    Some mornings call for breakfast casseroles.  Today was one of those mornings.  Typically on Sunday nights I pour a lot of time into meal prepping for the week, but last night I was drained, exhausted, and frankly I just didn’t feel like it.  So after a long, somewhat rested night, I devoted 15 minutes of my morning to prepping breakfast for the week.   It turned out as good as I imagined.     5 Ingredient Taco Stuffed Peppers

    No frills.  No B.S.  5 simple, clean ingredients, for a simple, clean meal.  If you want to add some extra spice to your taco meat, try my made-from-scratch taco seasoning below.  Ingredients:   4 medium bell peppers 1 c cooked quinoa 1 lbs lean ground turkey/chicken 1/2 c natural salsa 4 tbsp low fat Mexican shredded cheese Directions:  Slice peppers in half, remove seeds.  Bake in oven for 10 min at 350*.  While peppers are baking, brown ground turkey/chicken in skillet and add salsa.  Mix in 1 c cooked quinoa when turkey/salsa mixture is cooked.  Scoop mixture into peppers, overflowing.  Top with 1 tbsp cheese each.  Return to oven and bake…
