    Sweet Potato Breakfast Casserole

    Some mornings call for breakfast casseroles.  Today was one of those mornings.  Typically on Sunday nights I pour a lot of time into meal prepping for the week, but last night I was drained, exhausted, and frankly I just didn’t feel like it.  So after a long, somewhat rested night, I devoted 15 minutes of my morning to prepping breakfast for the week.   It turned out as good as I imagined. I saw a similar recipe in a cookbook at Anthropologie last weekend and it’s been on my mind ever since.  So tonight I recreated it- only subbing zoodles and unsweetened cashew butter as well as coconut aminos.     Sweet Potato Egg Muffins: Whole 30 Approved

    Cauliflower Rice Stir Fry – Whole 30 Approved

    Me on Whole 30:  What else can I cook that’s going to be amazing! THIS!     BLT Burger- Whole 30 Approved

      Day 24 of Whole 30 and I still haven’t had bacon.  Not that there’s anything against bacon.  I just know how much of it I’ll eat.  It’s shameful.  We haven’t kept it in the house for a long time for that very reason.   But with less than a week left, it’s time to indulge.  And I wanted a burger.  Something gourmet but not too fancy.  I’m still in workout clothes anyway so you know, just fancy enough.   So we grilled some amazing chicken burgers seasoned with rosemary on the grill.   While those were grilling I roasted some fresh kale in the oven, seasoned with a dash…

    Iron Skillet Chicken- Oven Roasted

      Winner winner, Sunday chicken dinner.  Everyone needs their go-to Sunday dinner.  When the in-laws are coming over.  When you don’t want to prep in the kitchen all day.  When you can one-and-done it.  And this is my new go-to.  It’s aromatic.  It’s crispy.  It’s juicy.  It’s pure heaven. There’s something beautiful about roasting a whole chicken.  It makes for so many meals and bone broth too.  And there’s something even more beautiful about cooking it in an iron skillet.  Where the chicken cooks in those juices and soaks up every last ounce of flavor.  It roasts perfectly.  The skin crisps up.  The flavor is so good.  And the skillet…

    Roasted Veggies- Whole 30 Approved

      One thing about meal prepping is having easy sides to pick and choose from.  Those tend to be more time consuming than preparing an actual meal at times.  One of my favorite things to prep on a Sunday is a pan of roasted veggies that will carry us through for a couple meals.  I do this a couple times each week, and they always turn out amazing.
