    Sweet Potato Breakfast Casserole

    Some mornings call for breakfast casseroles.  Today was one of those mornings.  Typically on Sunday nights I pour a lot of time into meal prepping for the week, but last night I was drained, exhausted, and frankly I just didn’t feel like it.  So after a long, somewhat rested night, I devoted 15 minutes of my morning to prepping breakfast for the week.   It turned out as good as I imagined.     Easy Egg All in One Breakfast Muffins

    I’m embarking on a new program next week.  To be honest, I’m pretty excited.  A fitness and nutrition adventure that for the next 3 months (ish) is going to shape my mindset (and my butt, arms, and abs) and the way I think about nutrition into some pretty amazing results.     Perfect Autumn Secret Ingredient Chili

    As soon as those leaves start falling, I’m busting out the crockpot and whipping up chili.  But the same chili recipe sometimes gets old and even this chili lovin’ momma needs to switch it up.  My kiddos are decent with eating veggies but I try to pack them in wherever I can.  I added two cups finely minced spinach to this crockpot as well as 1/2 cup of pumpkin too.  Everyone loved it.  I was pleasantly surprised with the reaction- not that I thought they wouldn’t like it, but with the sneaky nutrients I packed in there, there were no complaints!  Here’s the recipe!  Ingredients:  1 lb lean ground turkey…

    Strawberry Balsamic Chicken Salad

      My favorite salad.  Simple. Clean.  Healthy.  Something about strawberries and balsamic vinegar that makes a delicious combination!   Ingredients: 1 chicken breast, grilled 2 c spinach  1 c diced strawberries 1 tbsp feta cheese  1 tbsp chopped walnuts  2 tsp chia seeds  2 tsp balsamic vinegar  Directions:   Place spinach in bowl.  Add walnuts, feta, diced chicken breast, chia seeds, and strawberries.   Drizzle with balsamic vinegar.   Enjoy!!

    Honey Dijon Chicken Salad Wrap (21 Day Fix Friendly)

    When I lived in Soulard there was a little coffee shop that made the very best chicken salad.  I lived off that stuff.  Creamy. Nutty.     Mediterranean Chicken Flatbread Pizza

    If your “diet” or meal plan doesn’t call allow for pizza, you’re doing it wrong.  When I start a new fitness program, when we meal prep, when we do a lot of what we do, it involves pizza.  And if it can’t- well, that doesn’t make for a happy mommy!  Tonight, this momma is studying and I needed an easy dinner that would fill me up.  I whipped this up in minutes and baked it for 13 and voila!   Daddy took the three crazy kids to the mall playground to burn some energy and scream somewhere else and this momma cracked open an ice cold La Croix, and ate…

    Apple Walnut Salad with Honey Balsamic Vinaigrette

    I love a savory and sweet salad.  Especially when it’s a perfect complement to a big dinner.  This is my Thanksgiving dinner salad this year.  The crispness and crunch of the fresh-off-the-tree apples and the toasted walnuts make an excellent addition to this salad and it will pair nicely with roasted turkey breast, fresh bread, and white wine!
