    Chunky Chicken Tortilla Stew (Crockpot & Instant Pot)

    You can’t spell Taco Tuesday without “YES” or “EAT”… And when my picky kids EAT chicken chili that’s loaded with veggies, it makes this momma say, “YES!” This can be done in the crockpot or in the Instant Pot- depending on what you have time for.     Sweet Potato Breakfast Casserole

    Some mornings call for breakfast casseroles.  Today was one of those mornings.  Typically on Sunday nights I pour a lot of time into meal prepping for the week, but last night I was drained, exhausted, and frankly I just didn’t feel like it.  So after a long, somewhat rested night, I devoted 15 minutes of my morning to prepping breakfast for the week.   It turned out as good as I imagined.     Cauliflower Rice Stir Fry – Whole 30 Approved

    Me on Whole 30:  What else can I cook that’s going to be amazing! THIS!     Roasted Veggies- Whole 30 Approved

      One thing about meal prepping is having easy sides to pick and choose from.  Those tend to be more time consuming than preparing an actual meal at times.  One of my favorite things to prep on a Sunday is a pan of roasted veggies that will carry us through for a couple meals.  I do this a couple times each week, and they always turn out amazing.     Turkey Pumpkin Chili

    21 Day Fix Turkey Taco Cups

    The easiest of easy, healthy, and 21 Day Fix friendly dinners.  10 minutes skillet to table.  And always a hit with the whole family.  Only 6 ingredients total!  Enjoy and share!   Ingredients: 1 lb lean ground turkey  1 c of your favorite salsa (I used organic chipotle lime from Aldi) 1 can black beans 1 c frozen corn, thawed  Romaine lettuce leaves  Greek yogurt  Directions: In a skillet over medium-high heat, brown turkey with salsa.  Add beans and corn.  Mix well.  Serve in lettuce leaves and top with Greek yogurt.  Enjoy!   For 21 Day Fix: 1 red 1 yellow 1 green (3 leaves)  1/4 purple

    Lentil Stew (Crockpot)

    Fat Tuesday Jambalaya

    The old bartending days.  Down in Soulard.  Oooh I loved working Mardi Gras!  Tons of people.  Lots of tips.     Black Bean Lentil Stew

    On Sunday’s we crockpot.  Football, crisp autumn air, crunching in the leaves, wearing scarves, eating soups and stews out of cold weather bowls and getting that warm, fuzzy feeling.   This meal was created by total happenstance.  I wanted a crockpot dinner but didn’t have a plan so I worked with what I had.  And it worked.  My husbands words:  “Oh this is good.
