    Summer Sweet Corn Chowder

    Harvest is near. Driving home every day we’re surrounded by cornfields and bean fields.  I can see them starting to change.  Corn stalks turning brown.  Bean leaves yellowing after a summer of repeated rain and midwestern sun beating down.  And my heart leaps a little bit because it means my favorite season is approaching.     When the monsters awake from their slumber, it’s always a guess what they’re going to want for breakfast.  They’re imdivually picky and equally hard to please so it takes effort to find something they all agree upon.  I was pleased they all love these yummy chocolate banana granola bites aka mini muffins!  They’re gluten free and no added sugar too!     Sweet Potato Breakfast Casserole

    Some mornings call for breakfast casseroles.  Today was one of those mornings.  Typically on Sunday nights I pour a lot of time into meal prepping for the week, but last night I was drained, exhausted, and frankly I just didn’t feel like it.  So after a long, somewhat rested night, I devoted 15 minutes of my morning to prepping breakfast for the week.   It turned out as good as I imagined.
