    Autumn Squash Chili

      Autumn is my favorite season for cooking.  The smells, the flavors, the ingredients.  I could spend hours in the kitchen.  But I’m also a mom of three crazy, busy kids and truthfully, I don’t have time for that.  So I drag out my crockpot at least once a week for some easy, delicious meals.  Like this autumn squash chili.     A Mom Awakening… But First, Love

    We had a come to Jesus moment tonight… A mom awakening if you will… Tonight, one big sister at tennis lessons, another big sister rushed off to a neighborhood friend’s house to play, this FourNado was feeling left behind. She made it known too. A massive meltdown. Lots of sobbing tears (probably because of her lack of sleep and nap refusal today too), gasping for breath, and flat out frustration.     Harvest is near. Driving home every day we’re surrounded by cornfields and bean fields.  I can see them starting to change.  Corn stalks turning brown.  Bean leaves yellowing after a summer of repeated rain and midwestern sun beating down.  And my heart leaps a little bit because it means my favorite season is approaching.     When it’s Taco Tuesday and you need a little something different… this is our jam!!!  Have you made Taco Stuffed Zucchini Boats before? Hands down one of my favorite ways to eat more veggies is when they’re covered in taco flavored things! These are actually pretty simple to make from start to finish.  Hollowed out zucchini, seasoned ground turkey, some added diced tomatoes and black beans, and dinner is on the table in about 30 minutes!     Because every meal prep Monday should include a delicious lunch option.  And these portobello mushroom pizzas did it.  Delicious. Flavorful. Healthy. Clean. After a weekend of tacos, margaritas, cocktails, brunch, ice cream, and everything in between, it was necessary to get back on track today.  I made a quick run through the grocery store today and found these yummy portobello caps that were begging to be transformed.  So I did. Ingredients: Portobello Caps (large) Marinara Sauce Diced Chicken Breast Italian Shredded Cheese Cherry Tomatoes Fresh Basil Directions: Clean mushroom caps.  Fill each cap with 2-3 tbsp marinara.  Add diced chicken.  Top with 2tbsp shredded cheese.  Add sliced tomato and fresh…

    Seven Layer American Flag Dip

    Every patriotic summer barbeque calls for a seven layer dip!  And this is one of our favorites! Super simple.  Healthier alternative than most.  And great for dipping chips or veggies too!   Ingredients:  1 tub plain Greek yogurt 2 cans refried beans (I used organic vegetarian) 1 16oz jar of salsa Shredded romaine lettuce Black olives, sliced Roma tomatoes, finely diced Taco flavored shredded cheese Blue corn tortilla chips Directions:  In a 13×9 baking dish, spread refried beans evenly across pan.  Top with layer of salsa- 3/4- 1 c.  Add layer of sliced black olives.  Top olives with shredded lettuce then shredded cheese.  Dice Roma tomatoes, set aside.  Spoon Greek…
