We had a come to Jesus moment tonight… A mom awakening if you will… Tonight, one big sister at tennis lessons, another big sister rushed off to a neighborhood friend’s house to play, this FourNado was feeling left behind. She made it known too. A massive meltdown. Lots of sobbing tears (probably because of her lack of sleep and nap refusal today too), gasping for breath, and flat out frustration. I made a quick run through the grocery store today and found these yummy portobello caps that were begging to be transformed. So I did. Seven Layer American Flag Dip
Every patriotic summer barbeque calls for a seven layer dip! And this is one of our favorites! Super simple. Healthier alternative than most. And great for dipping chips or veggies too! Ingredients: 1 tub plain Greek yogurt 2 cans refried beans (I used organic vegetarian) 1 16oz jar of salsa Shredded romaine lettuce Black olives, sliced Roma tomatoes, finely diced Taco flavored shredded cheese Blue corn tortilla chips Directions: In a 13×9 baking dish, spread refried beans evenly across pan.
