Nutrition Simplified- Achieving Balance and Sustainability
Nutrition is my jam. Now, anyway. It wasn’t always. Yeah, I ate “healthy”. Lean Cuisines and Diet Coke used to be my jam. I paid zero attention to what I was putting in my body, but fully believed that a 1500 calorie salad was a good lunch choice and could nearly eat my weight in steak, baked potato, and buttery green beans at dinner… protein, carb, veggie, right? About 5 years ago I committed to and dove into a fitness and nutrition program that would forever change the landscape of how I approached my nutrition. One that allowed for balance. See, I was always under the impression you could have…

Spaghetti Squash Taco Lasagna Bake
This is one of those dinners… that satisfies every #TacoTuesday need. There’s something about Taco Tuesday. Every Monday night I get a little excited. Like it’s Christmas. Like the Taco Fairy is going to pay a visit to my house and sprinkle my taste buds with heavenly deliciousness of savory and cheesy and spicy goodness! This recipe is one that I may have dreamed of and woke up on Taco Tuesday eager to create. Yes, I dream about Taco Tuesday. Doesn’t everyone? Healthy. Clean. Lower carb. Super filling. Loaded with protein and veggies. My only regret when I made this was that I ran out of avocados the day prior.…

Carrot Cake Protein Muffins
When breakfast tastes like dessert… I call that a win. These are quite possibly my favorite grab-and-go muffins that taste heavenly, require a minimum of ingredients, and give you a filling serving of protein, veggies, carbs, and an optional add in of healthy fats too. I am a sucker for carrot cake. When carrot cake is healthier? Even better. When I can have carrot cake for breakfast? I’m in love. As a mother, muffins that pack a protein punch with the addition of my favorite- Vegan Vanilla Shakeology (a powerhouse plant based superfood shake mix that we use as a go-to for baking and to blend into daily milkshakes) mean…

Chunky Chicken Tortilla Stew (Crockpot & Instant Pot)
You can’t spell Taco Tuesday without “YES” or “EAT”… And when my picky kids EAT chicken chili that’s loaded with veggies, it makes this momma say, “YES!” This can be done in the crockpot or in the Instant Pot- depending on what you have time for. Personally I fixed this in the slow cooker on a lazy Sunday and the house smelled amazing. I’ve included the Instant Pot directions below too. Ingredients: 3 medium/large chicken breasts, thawed 2 cans fire roasted tomatoes 1 can black beans, drained 1 can kidney beans, drained 1 c carrots, diced 1 c celery, diced 1 c frozen corn 1 c diced mini sweet peppers…

Perfect Instant Pot Beef Stew
Owning and cooking with an Instant Pot is a lot like starting a fitness journey…. You purchase the equipment you need. More often than not you let it sit in the box, in the back of the closet/pantry, staring at you, judging you, silently asking, “When are you going to do this, girl?!” Then one day you decide it’s time. So you drag it out, spend more time perusing the internet than you should figuring out “how” to start, and just decide to tear the bandaid off. You throw some things together, you break a sweat in the process, you take caution to avoid injury, and when it’s all said…

Dieting Vs. Sustainability
❌Dieting vs sustainability…❌ A lot of our society is under the impression that in order to achieve our health and fitness goals we need to restrict, remove, and replace good nutrition with minimal nutrition, with cutting calories/carbs, or worse: weight loss products. It couldn’t be further from the truth. I used to assume 1200 calories and limiting carbs was the way to go. I struggled to lose the body fat I had, build any muscle, and lacked energy. Cue the energy drinks. Our bodies thrive on varieties of nutrients. Wholesome carb sources for energy, muscle growth and repair. Protein for muscle growth and cellular growth and repair. Healthy fats for…

Pumpkin Zucchini Power Muffins
“Eat more veggies”, they say. “Try to get more veggies in at breakfast,” they say. Let’s be honest, we don’t always run for the veggies at breakfast. My kids included. But when I can sneak them into muffins, it makes this momma’s job easier. These muffins are a favorite of mine. Not only is each serving size THREE muffins (seriously, I can barely eat two) but each serving size has a whole serving of veggies, protein, and carbs. An ideal combination for starting the day off healthy and with some energy. My kids love these too- easy to grab one and run out the door, or we save them…

Autumn Squash Chili
Autumn is my favorite season for cooking. The smells, the flavors, the ingredients. I could spend hours in the kitchen. But I’m also a mom of three crazy, busy kids and truthfully, I don’t have time for that. So I drag out my crockpot at least once a week for some easy, delicious meals. Like this autumn squash chili. This one is a new favorite. Hands down, perfect for fall. Perfect for when the weather starts to change and we begin to miss summer a little but then a bite of a delicious seasonal stew or chili reminds us we’re right where we need to be. A few hidden…
