Pumpkin Zucchini Power Muffins

“Try to get more veggies in at breakfast,” they say.

Let’s be honest, we don’t always run for the veggies at breakfast.  My kids included.  But when I can sneak them into muffins, it makes this momma’s job easier. 

These muffins are a favorite of mine.  Not only is each serving size THREE muffins (seriously, I can barely eat two) but each serving size has a whole serving of veggies, protein, and carbs.  An ideal combination for starting the day off healthy and with some energy.

My kids love these too- easy to grab one and run out the door, or we save them for an after school snack.

I personally love to grab one on the way down to the basement for a morning workout, eat it on the way, take my pre-workout, then let my body do the work.

Ingredients: 

2 large zucchini, shredded/grated

12 eggs or 6 eggs, 6 egg whites

1 c pumpkin pureé

1 tbsp pumpkin pie spice

1 tbsp cinnamon

1 tsp vanilla

2 scoops vanilla vegan superfood mix (I use and love vanilla vegan Shakeology)

2 cups old fashioned oats


Directions: 

Slice ends off zucchini and grate/shred making four 1c servings.  Pat dry with paper towels.  In a large bowl, mix eggs, vanilla, pumpkin.  Add in oats, Shakeology, and spices.  Mix well.  Spoon into coated/non stick muffin tin.  Bake at 350 degrees for 18-20 minutes until toothpick inserted comes out clean.  Cool on wire rack for 5-10 minutes.  Enjoy!

**Makes 12 Muffins.  One serving = 3 muffins.  Yes, these are big.  Enjoy it!
