    Mushrooms… yay? Or nay? I’m a total yay. In my eggs, soup, on my pizza. In tacos- y’all Mission Taco Joint has THE BEST portobello mushroom tacos! I’m a sucker for all things mushrooms. So to add them into a breakfast wrap to give it a bit more of a punch, this is my jam! Powerhouse of flavor. Delish combination. 2 servings of veggies in each wrap.     You had me at “10 Minute Breakfast”! My kiddos will sleep in, lounge on the couch for an hour, and then IMMEDIATELY decide they are STARVING and need to eat RIGHT NOW!!! Quick, healthy breakfasts are totally our jam. However, they default to toaster waffles and would prefer pop-tarts or donuts where I’m more of a “made from scratch” sort of mom.     I read an article yesterday that said “the discomfort you’re feeling is grief…” And as if a huge weight has been lifted off of my stressed out, anxious, feeling depressed and exhausted heart… That’s exactly what it is. My phone dinged bright and early Wednesday morning with a reminder that we should be boarding our flight to Punta Cana. I felt that feeling rising up again. Discomfort.Sadness.Anxiety. Grief.     What’s my favorite kind of lunch? One that takes less than 10 minutes, is packed with flavor, and aligns with my fitness and nutrition goals too. This is one of my favorites. Quick. Healthy. Delicious. And minimal ingredients. The added bonus is that at least one of my kids will eat it too!
