Mushrooms… yay? Or nay? I’m a total yay. In my eggs, soup, on my pizza. In tacos- y’all Mission Taco Joint has THE BEST portobello mushroom tacos! I’m a sucker for all things mushrooms. And a treat for your savory taste buds! Recipe below! Last 90 Days- End of 2020 Challenge!
Imagine this… What if we lived out the last 90 days of this year with the mindset we have at the beginning of the year… All of those January 1st things… “I’m going to make this year my best yet.”“I’m FINALLY going to get through that workout program.”“I’m going to drop those last 15 lbs.”“I’m not going to give up on myself.”“I’m going to accomplish ___________.”“I’m going to finish this year a stronger, happier, healthier person.” But what happens? Life gets in the way. I mean, I don’t want to bring it up, but this year has been a total doozy. We’re all exhausted. We’re all just trying to get…

The Best Grilled Fish Tacos
Move over taco truck!!! This momma made the BEST tacos!!! And y’all know me, I’m picky as hell about my tacos. So I needed to make my own! I was CRAVING restaurant quality tacos with all the fixings but without the $50 takeout price too. Now, let me warn you. I’m not fancy. I’m no Martha Stewart. But I’m all for creating healthier, more affordable, delicious meals that our family will eat… except tonight when they asked for eggs but they did try a bite of everything and didn’t complain- Annie even loved it. 😂 I used a yummy amberjack my husband Luke caught fishing in Florida, busted out my grill…

Healthier Air Fryer Donuts
You had me at “10 Minute Breakfast”! My kiddos will sleep in, lounge on the couch for an hour, and then IMMEDIATELY decide they are STARVING and need to eat RIGHT NOW!!! Quick, healthy breakfasts are totally our jam. However, they default to toaster waffles and would prefer pop-tarts or donuts where I’m more of a “made from scratch” sort of mom. Don’t get me wrong, we indulge every now and then, but if I can whip up a “healthier” version of a lot of things, I will. Donuts are one of our favs in this house too. The greasy, gooey, chocolatey smothered, deep-fried, treats don’t last too long here.…

Hidden Veggie- No Boil Lasagna
That signature recipe. My mom always told me, “You need to have that one recipe. The one that you can serve for anyone, anytime, and it’s always a hit. Whether your priest is coming over for dinner, you’re taking a meal to a new mom friend, and you want to pass down to your kiddos and grand-kiddos.” I’m pretty sure this might be it. It’s only taken me years to “perfect” it, but after tonight’s dinner, I think it’s safe to say that it’s blog-worthy and something I should share with the world. What made my night tonight is that not only did my husband have seconds, but my children…

The BEST Banana Bread Recipe
I vowed to use this time at home to bake more with the girls. Their most recent request was for a super gooey, chocolate chip filled banana bread. And where I’ve made good banana breads in the past I was determined to make THE recipe that would wow them and assure that not one crumb would go to waste. This. Is. It. Gooey. Buttery. Full of flavor. And better than any I’ve made before. We hope you enjoy this as much as we have! Let me know what you think! Ingredients: 3 mashed, ripe bananas 1/4 c wildflower honey3 eggs1 cup old fashioned oats4 tbsp butter, softened2 tbsp organic cane…

It’s Not Just Anxiety, It’s Also Grief
I read an article yesterday that said “the discomfort you’re feeling is grief…” And as if a huge weight has been lifted off of my stressed out, anxious, feeling depressed and exhausted heart… That’s exactly what it is. My phone dinged bright and early Wednesday morning with a reminder that we should be boarding our flight to Punta Cana. I felt that feeling rising up again. Discomfort.Sadness.Anxiety. Grief. The article went on to state we’re the first generation who has feelings about our feelings. We mask our grief to protect others. Not to look guilty or selfish. And we brush it off. When in all reality, we should be allowed…

2020 March Health Bet – Bet on You
When you bet on yourself, it’s hard to lose. It’s that time of year again! One of my most favorite, friendly competition, go all-in, and create, build, and achieve that momentum kind of groups is about to kick off! It’s time for our 2020 March Health Bet. We will officially be kicking off our annual Health Bet group on March 1st. This group will run through the whole month of March! We focus on better habits, nutrition, weight/fat loss, muscle gain, and establishing (or re-establishing) healthy habits going into the Spring months! I will dive into meal planning and cover all topics that help establish long-term habits too. What does…

Pesto Shrimp Zoodle Bowl
What’s my favorite kind of lunch? One that takes less than 10 minutes, is packed with flavor, and aligns with my fitness and nutrition goals too. This is one of my favorites. Quick. Healthy. Delicious. And minimal ingredients. The added bonus is that at least one of my kids will eat it too! Today’s lunch (and I made a double batch so tomorrow’s meal too) is one of my favorites for a combination of yummy flavors, is a great addition to any weekly meal prep, or can be a simple dinner for two as well. Zoodles make for a delicious alternative to a heavy carbohydrate pasta. Now, don’t get me…
