    Kid Favorite Mini Muffins

    A super simple breakfast and snack muffin recipe that can be whipped up quick is a lifesaver!  We baked these the other night for breakfasts and snacks!  They’re clean/healthy and nutritious too and perfect for those busy back to school mornings or afternoon snacks!  Kid Favorite Blueberry Muffins: Ingredients: 1.5 c quick cook oats 1/2 c whole wheat or almond flour  1 tsp baking powder 1/2 tsp cinnamon 1 large mashed banana  1 c vanilla unsweetened almond milk  1/4 c honey 1 egg, beaten  1/2 c blueberries (or chopped strawberries, blackberries, or 3 tbsp chocolate chips! 😉) Pinch of sea salt  Directions:  Mix everything together in a bowl.  Spoon by…

    Strawberry Shortcake Bites

    “Mooooommmmm!  I’m hungry!!!  Can I have a snack?!” My go-to for my 3 hungry rascals? Protein energy bites.  We usually make plain vanilla or chocolate but we switched it up tonight and went for strawberry shortcake.  A little bit of chia seeds and they turned out perfect!   Ingredients:  1.5 scoops strawberry Shakeology 1/2 scoop vanilla Shakeology  1/2 c natural peanut butter  1/3 c wildflower honey 1.5 c quick oats  1 tbsp chia seeds  Directions:  Combine all ingredients in a bowl.  Mix well.  Roll into 1″ bite sized balls.  Enjoy!

    BBQ Turkey Sliders

    Burgers.  Burger love.  Oh yeah…  One of my favorite cheat meals is a juicy burger.  So we opted for a healthier slider recipe for SuperBowl Sunday right here!  Ground turkey.  Organic BBQ sauce.  Topped with romaine and sliced avocado.  These are a kid favorite too!  Enjoy!   Ingredients:  1 lb lean ground turkey 3 tbsp organic honey BBQ sauce 1/4 cup ground flaxseed Sea salt and black pepper to taste Our Fav Toppings:  Cheese Avocado Dijon Mustard Romaine Lettuce Roma Tomatoes Directions:  In a large bowl, combine turkey, BBQ sauce, flaxseed, salt and pepper (I mix it with my hands!).  Shape into 8 small burger patties.  Indent each one with…

    Buffalo Chicken Bites (Healthier Version)

    Put out the buffalo chicken beacon and I’ll be the first one there!  And I feel like Super Bowl is one of the best days for all things buffalo chicken.  I wanted to come up with a recipe for buffalo chicken dip that was healthier and I got the idea to make them into bites, and believe me.  These turned out amazing!  I hope you enjoy them as much as we did!     Meal Prep Madness

    We are the epitome of busy.  We have three girls ages 8, 5, and 3.  My husband travels some for work.  I am a nurse (not currently practicing).  I run a business from my home helping people meet their fitness and nutritional goals.  We workout daily.  I grocery shop.  I run monthly accountability groups for my clients.  We prepare our meals fresh.  We have even been known to do fitness competitions.     Mummy Pizzas

    Does anyone else love coming up with festive recipes for each holiday?  Or trying things out from Pinterest?  We went for it tonight!  And they turned out great! My kiddos love English muffin and sandwich thin mini pizzas and we just had to make them into mummies for Halloween!   Ingredients: Whole grain English Muffins or Sandwich Thins Organic tomato/basil pasta sauce or marinara sauce  Sliced mozzarella cheese Sliced black olives Directions: Place thins on parchment paper lined sheet or foil (spray with cooking spray).   Top with sauce and place cheese slices across.  Top with black olive eyes.  Bake at 400* for 10-13 minutes until cheese bubbles.  Enjoy!  …

    Dark Chocolate Shakeology Granola Bars

    It’s 10:00 pm.  Do you know where your husband is?     Clean Eating Shakeology Granola Bars
