Easy Peasy Mac and Cheesy Dinner
I measure the success of my dinners by how much of them my family will eat… Stuffed portobello mushroom pizzas? No-go. Homemade chicken noodle soup? Yes please.Anything with quinoa? Not. A. Chance.BBQ chicken sliders?Always a favorite. So I knew mac and cheese would be a bit tricky, since my kiddos love Annie’s Bunny Pasta as their measuring stick for any mac and cheese. But, I went with my gut- because it was craving a healthier mac and cheese, and whipped up this cleaner, healthier version. No powdered cheese. No artificial colors or flavors. Just simple and delicious. Husband approved, “You know, I don’t typically like your healthier attempts at traditional…

Did I prepare her enough…
“Mommy, are you crying?! Is everything okay?” Maybe it’s because we’d just finishing reading “On the First Day of Kindergarten”… Or maybe it was that as I walked into their rooms to tuck them in I saw their backpacks lined up against the wall, ready for a new year of memories… And this time, there were three. Three. Full-time school. No longer home with momma. Mid-day naps. Out to lunch because we can. Park play date just for fun on a Tuesday. Snuggles on the couch watching movies while it’s raining. Off to kindergarten with her big sisters… backpacks. As a parent we know the milestones are coming. We know…

Spaghetti Squash Lasagna
I’m like Garfield. If I make a pan of lasagna I’m going to eat it all. It’s a strength and a weakness all at the same time. But, I found a healthier alternative and it’s just as good. My husband ate it and didn’t complain so that counts as a win, right? Lower carb, not overloaded with sodium, simple ingredients, and easy assembly. Do me a favor, let me know what you think, mmmkay? Ingredients: 1 large or 2 small spaghetti squash, roasted and shredded into “spaghetti”. 1 jar organic/clean pasta sauce, I prefer tomato basil or garden veggie 2 c plain Greek yogurt (you can sub ricotta cheese) 1…

Crockpot Chicken Taco Lettuce Wraps
Because Taco Tuesday Shouldn’t Be Difficult… We do tacos pretty much every Tuesday. I’ve never met a taco that I don’t like. Truthfully. Fish. Chicken. Portobello mushroom. Corn. Flour. Fajitas. Taco salads. Lettuce wraps. Everything in between. I’m not picky. But sometimes we switch it up to make them a little healthier and that’s okay too. And these lettuce wrap tacos are a super simple fix and still packed with flavor and are filling too. I like to toss the chicken in the crockpot then dinner is a quick 5-10 minutes of prep before I’m shoving these little boats of heaven in my mouth! Here’s the recipe below. Both for…

Nutrition Simplified- Achieving Balance and Sustainability
Nutrition is my jam. Now, anyway. It wasn’t always. Yeah, I ate “healthy”. Lean Cuisines and Diet Coke used to be my jam. I paid zero attention to what I was putting in my body, but fully believed that a 1500 calorie salad was a good lunch choice and could nearly eat my weight in steak, baked potato, and buttery green beans at dinner… protein, carb, veggie, right? About 5 years ago I committed to and dove into a fitness and nutrition program that would forever change the landscape of how I approached my nutrition. One that allowed for balance. See, I was always under the impression you could have…

Instant Pot Jambalaya- Healthy Version
Nothing says Mardi Gras and Fat Tuesday like a heaping pot of jambalaya! As a former bartender who worked in the second busiest Mardi Gras capital in the US, Mardi Gras and Fat Tuesday were days I did NOT want to miss working behind the bar. Everyone comes out. Everyone parties. Everyone drinks. And (hopefully) everyone eats. One of my favorite Mardi Gras traditions (aside from all of the bright red teeth and smiles from the crowd drinking hurricanes all day) is the food that comes with it. If you’re from St. Louis or have been to St. Louis, you know there’s a good bit of blues history, good music,…

This is one of those dinners… that satisfies every #TacoTuesday need. There’s something about Taco Tuesday. Every Monday night I get a little excited. Like it’s Christmas. Like the Taco Fairy is going to pay a visit to my house and sprinkle my taste buds with heavenly deliciousness of savory and cheesy and spicy goodness! This recipe is one that I may have dreamed of and woke up on Taco Tuesday eager to create. Yes, I dream about Taco Tuesday. Doesn’t everyone? Healthy. Clean. Lower carb. Super filling. Loaded with protein and veggies. My only regret when I made this was that I ran out of avocados the day prior.…
