Crockpot Chicken Taco Lettuce Wraps

Because Taco Tuesday Shouldn’t Be Difficult…

We do tacos pretty much every Tuesday. I’ve never met a taco that I don’t like. Truthfully. Fish. Chicken. Portobello mushroom. Corn. Flour. Fajitas. Taco salads. Lettuce wraps. Everything in between. I’m not picky.

But sometimes we switch it up to make them a little healthier and that’s okay too. And these lettuce wrap tacos are a super simple fix and still packed with flavor and are filling too.

I like to toss the chicken in the crockpot then dinner is a quick 5-10 minutes of prep before I’m shoving these little boats of heaven in my mouth! Here’s the recipe below. Both for the crockpot chicken and to pack them into lettuce wraps!

Ingredients:

  • 4 medium/large chicken breasts
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • 2 tsp paprika
  • 2 tsp garlic powder or 1 tbsp fresh garlic
  • 2 tsp oregano
  • 2 tbsp lime juice or juice of 1 lime
  • 1 tbsp olive oil (I use Olivino’s Harissa Pepper)
  • 1/3 c organic chicken broth
  • Sea Salt & Black Pepper to taste
  • Romaine Lettuce or Bib Lettuce
  • Black Beans/Corn/Brown Rice
  • Fresh Salsa
  • Cheese (optional)- we like cojita or goat cheese or can dollop with plain Greek Yogurt too
  • Avocado, sliced

Directions:

  • In a crockpot, add first 10 ingredients- chicken and seasonings. Turn to low for 6 hours.
  • Remove chicken from crockpot, wash romaine leaves, stuff with chicken, cooked brown rice, corn, black beans, salsa, avocado, cheese, and any additional toppings.

This chicken also works great in a burrito bowl like this one or in a pita or corn tortillas/wrap too. Enjoy!
