Easy Egg All in One Breakfast Muffins
I’m embarking on a new program next week. To be honest, I’m pretty excited. A fitness and nutrition adventure that for the next 3 months (ish) is going to shape my mindset (and my butt, arms, and abs) and the way I think about nutrition into some pretty amazing results.
I was pouring into the nutrition plan the other night and the idea of a preworkout meal is something as a bikini competitor I’m familiar with but with mom life and kid needs it doesn’t always happen. So as part of this nutrition plan I’ll be incorporating timed nutrition to fuel results and feed my muscles and metabolism the foods they need in order to grow, burn, and function at optimal level. And I’m bringing several dozen other women with me.
This is one of the simplest to make and ideal nutritive things combinations for a preworkout meal- one designed to be consumed 60-90 minutes prior to beginning a workout or if you’re like me with raging high metabolism, about 15 minutes before I begin.

Ingredients
1 dozen eggs (half whole eggs, half egg whites)
1 large bell pepper, diced
1/4 onion, chopped
2 c spinach, finely minced
2 c cooked, finely chopped baby red potatoes
1 c cherry tomatoes, halved
2 tbsp coconut oil, melted & drizzled evenly into muffin pan
1 tsp sea salt
1/2 tsp black pepper
Directions:
Preheat oven to 350*. Drizzle melted coconut oil into muffin tins. Whisk eggs until blended, add spinach and seasonings. Add potatoes, peppers, onion, tomatoes to muffin tins. Pour egg mixture into muffin tins.
Bake at 350* x 20 minutes. Cool on rack x 5 minutes.

These make 12-14 muffins aka one week of prepped preworkout meals!

Made these they are good . may be my tins are not deep enough but I got 24 out of the recipe. Also had sticking issue but they taste very good

Glad you enjoyed them! I've found that silicone muffin cups work really well for non stick!
