    Easy Egg All in One Breakfast Muffins

    I’m embarking on a new program next week.  To be honest, I’m pretty excited.  A fitness and nutrition adventure that for the next 3 months (ish) is going to shape my mindset (and my butt, arms, and abs) and the way I think about nutrition into some pretty amazing results.     Deer Season Chili

    We live about 2 hours from my in-laws.  When the weather gets cold we can count on heading that way at least one weekend each month.  Hunting season starts.   The men trudge out at 4:30 am and we sleep snugly under fuzzy blankets until the sun comes peeking in the windows.  We emerge in slippers to a pot of coffee and a batch of pancakes off the griddle and spend the day doing crafts, playing with Playdough, and preparing a yummy dinner for when they return.   One of my favorites is my mother-in-laws chili.  There’s something about a big pot of chili on a Sunday afternoon to fill up…

    Vegetarian Couscous Salad

    Vegetarian Couscous Salad This is a favorite of mine.  A yummy, one-dish meal, perfect for an on-the-go lunch, or a light, healthy dinner. Ingredients: For the salad: 1 c whole wheat couscous 1 tsp EVOO 1 medium tomato (chopped) 1 c frozen peas (thawed) 1 can kidney beans rinsed & drained 1/2 tsp parsley 1/4 c low fat Feta cheese For the dressing: 3 tbsp EVOO 2 tbsp red wine vinegar 1 tsp oregano 1/4 tsp sea salt 1 tsp basil Directions: Bring 1 1/4 c water to a boil, add tsp of EVOO and couscous.  Stir in, cover and remove from heat.  Let stand 5 minutes.  Spoon into large bowl, add…
