The perfect harmony of soy, peanut, and honey. Just when I think Mexican cuisine is my favorite, something like this takes me back to loving Asian inspired foods. Today’s lunch was super simple. Honey, peanut, and soy glazed salmon with just a touch of ginger. Some stir fry veggies, over a bed of red quinoa and this momma is set! Maple Honey BBQ Sauce
When it’s summer, we BBQ. And you know this semi-crunchy, clean eating momma just had to whip up a made-from-scratch recipe to start basting our goodies in for the grill. This was super easy, just enough zest, and is great for dipping too! Ingredients: 3 tbsp tomato paste 1 8 oz can tomato sauce 1 tbsp chili powder 1 tbsp paprika 2 tbsp pure maple syrup 2 tbsp wildflower honey 1 tsp chipotle chili powder Sea salt & ground black pepper to taste Directions: Mix all ingredients in a small saucepan. The easiest of easy, healthy, and 21 Day Fix friendly dinners. 10 minutes skillet to table. And always a hit with the whole family. Only 6 ingredients total! Enjoy and share! Strawberry Shortcake Bites
“Mooooommmmm! I’m hungry!!! Can I have a snack?!” My go-to for my 3 hungry rascals? Protein energy bites. We usually make plain vanilla or chocolate but we switched it up tonight and went for strawberry shortcake. A little bit of chia seeds and they turned out perfect! Ingredients: 1.5 scoops strawberry Shakeology 1/2 scoop vanilla Shakeology 1/2 c natural peanut butter 1/3 c wildflower honey 1.5 c quick oats 1 tbsp chia seeds Directions: Combine all ingredients in a bowl. Some people live for Friday. This lady lives for taco Tuesday. Switching it up this week for some zesty fish tacos. Easy peasy lime squeezie! Enjoy! Ingredients: 2 tilapia filets 1/2 tbsp chili powder 1 tsp cumin 1/2 tsp garlic powder 1/4 tsp sea salt Juice of 1/2 lime Other half of lime sliced Directions: Preheat oven to 400*. Spray a foil-lined cookie sheet with olive oil. Place thawed filets on sheet. Squeeze lime juice over fish. Mix dry spices together. Rub evenly onto fish. Place lime slices on top.
