Holiday Survival Group + 12 Days of Giveaways!
It’s the most wonderful time of the year! I LOVE everything about the holidays! Yes, the cookies, the cocktails, the shopping, the gift giving, the music, the Hallmark movies… all reasons why I LOVE this time of year. But my FAVORITE part of the holiday season is the magical feeling that surrounds this time of year. And yes, we put our tree up yesterday in case you were wondering! But don’t worry, I’m not going to bust out carols on you yet. Although, I will say, it does feel a bit more joyous and almost magical during the holidays, am I right? As a mother to three little girls who…

Helllloooooooo fall!!! Y’all… I know. Summer JUST ended, right? But is anyone else just as excited for the smells, and flavors, and goodies that come with this season?! I will admit it…. we’re already bought pumpkin spice coffee. I’ve put up just a few fall decorations. And we just ordered our pumpkin spice Shakeology! I can’t help it, I’m excited for fall. One thing that I’m MOST excited about this season is that my favorite vegan shake, my post-workout, my simple, clean, healthy go-to snack, is now available in Pumpkin Spice flavor! Yep! All of the flavors of the season without the additives, sugary chemicals, and artificial flavors that come…

Easy Peasy Mac and Cheesy Dinner
I measure the success of my dinners by how much of them my family will eat… Stuffed portobello mushroom pizzas? No-go. Homemade chicken noodle soup? Yes please.Anything with quinoa? Not. A. Chance.BBQ chicken sliders?Always a favorite. So I knew mac and cheese would be a bit tricky, since my kiddos love Annie’s Bunny Pasta as their measuring stick for any mac and cheese. But, I went with my gut- because it was craving a healthier mac and cheese, and whipped up this cleaner, healthier version. No powdered cheese. No artificial colors or flavors. Just simple and delicious. Husband approved, “You know, I don’t typically like your healthier attempts at traditional…

Spaghetti Squash Lasagna
I’m like Garfield. If I make a pan of lasagna I’m going to eat it all. It’s a strength and a weakness all at the same time. But, I found a healthier alternative and it’s just as good. My husband ate it and didn’t complain so that counts as a win, right? Lower carb, not overloaded with sodium, simple ingredients, and easy assembly. Do me a favor, let me know what you think, mmmkay? Ingredients: 1 large or 2 small spaghetti squash, roasted and shredded into “spaghetti”. 1 jar organic/clean pasta sauce, I prefer tomato basil or garden veggie 2 c plain Greek yogurt (you can sub ricotta cheese) 1…

Nutrition Simplified- Achieving Balance and Sustainability
Nutrition is my jam. Now, anyway. It wasn’t always. Yeah, I ate “healthy”. Lean Cuisines and Diet Coke used to be my jam. I paid zero attention to what I was putting in my body, but fully believed that a 1500 calorie salad was a good lunch choice and could nearly eat my weight in steak, baked potato, and buttery green beans at dinner… protein, carb, veggie, right? About 5 years ago I committed to and dove into a fitness and nutrition program that would forever change the landscape of how I approached my nutrition. One that allowed for balance. See, I was always under the impression you could have…

Chunky Chicken Tortilla Stew (Crockpot & Instant Pot)
You can’t spell Taco Tuesday without “YES” or “EAT”… And when my picky kids EAT chicken chili that’s loaded with veggies, it makes this momma say, “YES!” This can be done in the crockpot or in the Instant Pot- depending on what you have time for. Personally I fixed this in the slow cooker on a lazy Sunday and the house smelled amazing. I’ve included the Instant Pot directions below too. Ingredients: 3 medium/large chicken breasts, thawed 2 cans fire roasted tomatoes 1 can black beans, drained 1 can kidney beans, drained 1 c carrots, diced 1 c celery, diced 1 c frozen corn 1 c diced mini sweet peppers…

Perfect Instant Pot Beef Stew
Owning and cooking with an Instant Pot is a lot like starting a fitness journey…. You purchase the equipment you need. More often than not you let it sit in the box, in the back of the closet/pantry, staring at you, judging you, silently asking, “When are you going to do this, girl?!” Then one day you decide it’s time. So you drag it out, spend more time perusing the internet than you should figuring out “how” to start, and just decide to tear the bandaid off. You throw some things together, you break a sweat in the process, you take caution to avoid injury, and when it’s all said…
