Buffalo Chicken Stuffed Sweet Potatoes
Adam and Eve. Romeo and Juliet. Beyoncé and Jay-Z. Peanut butter and jelly. Buffalo chicken and sweet potatoes.
Ok, so that last pair seemed questionable at first but I thought about all of the things I loved. Chicken. Buffalo wing sauce. Sweet potatoes. It HAD to be good. Well, turns out I have a new favorite way to stuff my sweet potatoes!
Inspired by one of the lovely ladies in my current fitness and nutrition accountability group, I had to try my spin on these.
So, you can do this one of two ways:
Slow-cook the chicken in a little buffalo sauce and ranch seasoning or Bolthouse Farm’s Greek yogurt Ranch, or use leftover grilled chicken from our meal prep, dice, toss in sauce and seasonings over medium heat, and spoon into baked sweet potatoes. Regardless how you do it, yum! Hope you enjoy!!
Ingredients:
4 medium chicken breasts (thawed and or grilled)
1/4 c buffalo wing sauce- I used Franks Red Hot
1/2 packet Ranch seasoning (or 2 tbsp Bolthouse farms Ranch)
1/4 c plain Greek yogurt
4 tbsp lowfat shredded cheese (colby jack)
Chopped chives
4 sweet potatoes- baked and sliced open
Directions:
Bake sweet potatoes in foil for 45 minutes at 400* until tender
Dice grilled chicken and place in skillet over medium heat
Add wing sauce and stir. Reduce heat to low, add ranch seasoning or dressing, Greek yogurt, and stir well. Spoon mixture into sweet potatoes. Top with shredded cheese. Place under broiler for 1-2 minutes until cheese bubbles. Top with chives. Serve and enjoy!
