    Broccoli Cheddar Stuffed Sweet Potatoes

    I think we all know what’s important in life. Food that you can melt cheese on top of. Tonight, I wanted a dinner that was simple, flavorful, and didn’t require a lot of effort on my part.  Granted this took almost an hour to cook, prep was about 10 minutes tops.  And the melty cheese part, well that’s a bonus.     Italian Chicken Stuffed Spaghetti Squash- Low Carb

    Oh sweet baby lord in heaven… I wish  the internet had smell-o-vision… this might just be at the top of things I’ve whipped up that I could eat every day and never get tired of it. Autumn has set in and that means all things squash.  I’m like Bubba Gump.  Squash salad, squash pancakes, squash cheesecake, squash chili, stuffed squash.     Taco Stuffed Spaghetti Squash

    Fall is here.  So much squash.  We have been given large amounts of squash several times in the past few weeks and we’re up to our ears in squash.  Fortunately my kids eat spaghetti & meatballs with spaghetti squash (not always, but we made it work the other night).   But I needed something to do with the rest of the spaghetti squash and I thought I’d take my ground turkey, a little salsa, stuff it and bake it.  And it was everything I dreamed it would be and more!  My husband approved.  He’s not a squash eater by any means so it wasn’t easy to come up with something…

    BBQ Pulled Chicken Stuffed Sweet Potatoes

    Summer = BBQ.  I always eat too much BBQ and feel miserable afterward- who’s with me?  So this combo of BBQ pulled chicken, sweet potato, and a little bit of sweet, heat, and cilantro hit the spot!   My crockpot was perfect for the chicken, 4-6 hours on low and it pulled apart perfectly.  Sitting on the patio, a nice cold beverage in hand, a yummy side salad, and this makes the perfect summer meal!     Quinoa Stuffed Mini Peppers

    Easy. Simple. Delicious.   An all-in-one appetizer, side to accompany dinner, or healthy afternoon snack.  This was one of those “come together” moments.  I had the quinoa cooked, I’d already steamed the kale, and I was chopping up peppers when I thought- why don’t we put this together! And this recipe was born!  Enjoy!  Ingredients:  6-8 mini peppers 2 c steamed chopped kale  1 c cooked quinoa 1/4 c (extra) diced peppers & red onion Feta cheese, optional  Directions: Cook quinoa according to package.  Steam kale until dark green.   Sauté extra diced peppers and onions in skillet with 2 tbsp water.  Slice mini peppers in half, top to bottom.…

    Buffalo Chicken Stuffed Sweet Potatoes

    Adam and Eve.  Romeo and Juliet.  Beyoncé and Jay-Z.  Peanut butter and jelly.  Buffalo chicken and sweet potatoes. Ok, so that last pair seemed questionable at first but I thought about all of the things I loved.  Chicken.
