Creamy Chicken and Rice Soup (Crockpot)
Three year old with a high fever and a tummy ache. Not good. Naps. Snuggles. Blankies. Movies. Repeat. It’s time for my cure-all. Fool-proof, tummy soothing, chicken soup. When I can throw it all in the crock pot that’s even better because that means I get more snuggle time with her. And that’s key. Whether it’s an upset tummy, the need for a new clean eating recipe, a kid-friendly meal, or an easy crock pot fix, this one has family meal written all over it and is a big favorite in our house, not just on sick days.
Chicken and Rice Soup
Ingredients:
4 small-medium boneless chicken breasts, thawed
2 cups low sodium chicken broth
4 celery ribs, diced
1 cup chopped carrots
1/2 yellow onion, diced
3 cloves garlic, minced
1 cup brown basmati rice
2 cups water
1 tbsp chopped parsley
1/2 tsp ground oregano
2 bay leaves
3/4 cup lowfat Greek yogurt
Sea salt and black pepper to taste
Directions:
Put chicken in crock pot. Add remaining ingredients with the exception of the rice, 2 cups water, and the yogurt. Cook on low 4 hours. Add rice and water. Cook another 1-2 hours until rice is tender and has absorbed some water. Turn to “warm” and let sit for 30 minutes. Add yogurt and stir well. Spoon into bowls. Enjoy!
