    Harvest is near. Driving home every day we’re surrounded by cornfields and bean fields.  I can see them starting to change.  Corn stalks turning brown.  Bean leaves yellowing after a summer of repeated rain and midwestern sun beating down.  And my heart leaps a little bit because it means my favorite season is approaching.       Some nights you just need a comfort food, soul feeding, delicious pan of creamy enchiladas.  It’s been years since I made a pan of enchiladas and to say we were due was an understatement.  As we embark on a 3 week- super healthy fitness & nutrition regimen in prep for our Punta Cana vacation on April 23rd, this was a healthier “last hoorah” as a pre-gift to ourselves for committing to hard work for 3 weeks.     Honey Dijon Chicken Salad Wrap (21 Day Fix Friendly)

    When I lived in Soulard there was a little coffee shop that made the very best chicken salad.  I lived off that stuff.  Creamy. Nutty. The chicken was cooked perfectly.  I still get warm fuzzies thinking about it.   Today.  Warm fuzzies.  This lunch was hands down one of the best things I’ve made in a long time.  It was simple and delicious.  Creamy, clean, healthy and hit the spot.  Nothing more.  Nothing less.  Just perfection.     Gluten Free Chicken Noodle Soup

    When I was little, my mom made this homemade chicken noodle soup that was to die for.  Every time I was sick.  I could count on this yummy, creamy, delicious soup.  I couldn’t even tell you what she put in it (maybe I should ask her for the recipe) but it was delicious.  So with some change-in-the-season coughs coming around, a runny nosed toddler, a croupy three year old, and a feverish 6 year old, it was time for some crockpot chicken noodle soup today.   Every child needs that one soup memory.  That warm your soul, heal me when I’m sick, best mommy remedy.  This is that soup.  …

    Creamy Chicken and Rice Soup (Crockpot)
