Vegetarian Couscous Salad
This is a favorite of mine. A yummy, one-dish meal, perfect for an on-the-go lunch, or a light, healthy dinner.
Ingredients:
For the salad:
1 c whole wheat couscous
1 tsp EVOO
1 medium tomato (chopped)
1 c frozen peas (thawed)
1 can kidney beans rinsed & drained
1/2 tsp parsley
1/4 c low fat Feta cheese
For the dressing:
3 tbsp EVOO
2 tbsp red wine vinegar
1 tsp oregano
1/4 tsp sea salt
1 tsp basil
Directions:
Bring
1 1/4 c water to a boil, add tsp of EVOO and couscous. Stir in, cover
and remove from heat. Let stand 5 minutes. Spoon into large bowl, add
in chopped tomato, peas, beans and parsley. Stir ingredients for
dressing in a small bowl with a fork until combined. Pour over salad.
Top with Feta cheese. Enjoy!
