    Broccoli Cheddar Stuffed Sweet Potatoes

    I think we all know what’s important in life. Food that you can melt cheese on top of. Tonight, I wanted a dinner that was simple, flavorful, and didn’t require a lot of effort on my part.  Granted this took almost an hour to cook, prep was about 10 minutes tops.  And the melty cheese part, well that’s a bonus.     Deer Season Chili

    We live about 2 hours from my in-laws.  When the weather gets cold we can count on heading that way at least one weekend each month.  Hunting season starts.   The men trudge out at 4:30 am and we sleep snugly under fuzzy blankets until the sun comes peeking in the windows.  We emerge in slippers to a pot of coffee and a batch of pancakes off the griddle and spend the day doing crafts, playing with Playdough, and preparing a yummy dinner for when they return.   One of my favorites is my mother-in-laws chili.  There’s something about a big pot of chili on a Sunday afternoon to fill up…

    Taco Tuesday!  I wanted to switch it up tonight and try something different.     We had some of THE BEST tacos at Bakersfield while we were in Nashville this past weekend.  I mean, wow.  Hand made corn tortillas, mahi, braised spare rib, marinated portabella… I was in total heaven.  We ate there twice.  Then we found Nashville Street Tacos… agghhh!  More deliciousness!     Beef and Butternut Squash Stew

    Clean Eating Crockpot Fajitas

    Ohhhhhhhh do we love fajitas in our house!  I’ve tried them every which way but I always come back to the “old faithful” crockpot fajitas.  These are super simple, clean, and low carb too!  And always leave us full and satisfied!     Vegetarian Couscous Salad

    Vegetarian Couscous Salad This is a favorite of mine.  A yummy, one-dish meal, perfect for an on-the-go lunch, or a light, healthy dinner. Ingredients: For the salad: 1 c whole wheat couscous 1 tsp EVOO 1 medium tomato (chopped) 1 c frozen peas (thawed) 1 can kidney beans rinsed & drained 1/2 tsp parsley 1/4 c low fat Feta cheese For the dressing: 3 tbsp EVOO 2 tbsp red wine vinegar 1 tsp oregano 1/4 tsp sea salt 1 tsp basil Directions: Bring 1 1/4 c water to a boil, add tsp of EVOO and couscous.  Stir in, cover and remove from heat.  Let stand 5 minutes.  Spoon into large bowl, add…
