    Quinoa Chicken Salad- Mediterranean

      Yesterday we hosted a little housewarming party/BBQ and where I love a fridge full of leftovers, I get tired of eating the same thing.  So I   whipped up a simple salad with some leftovers.  Enjoy!  Share!  Love!   ,  Mediterranean Quinoa Chicken Salad For the quinoa salad: 1 c quinoa 2 c water  (Cook according to package)  When cooked and fluffed with fork, add: 1 medium cucumber, diced  1 large (or 3 Roma) tomato, diced1/2 green pepper, chopped  1/4 red onion, minced 2 tsp EVOO  1/4 c roasted red pepper dressing  1/2 tsp Himalayan sea salt  1 tsp oregano  Toss ingredients together.  Add in 1-2 c chopped kale,…

    Strawberry Balsamic Chicken Salad

      My favorite salad.  Simple. Clean.  Healthy.  Something about strawberries and balsamic vinegar that makes a delicious combination!   Ingredients: 1 chicken breast, grilled 2 c spinach  1 c diced strawberries 1 tbsp feta cheese  1 tbsp chopped walnuts  2 tsp chia seeds  2 tsp balsamic vinegar  Directions:   Place spinach in bowl.  Add walnuts, feta, diced chicken breast, chia seeds, and strawberries.   Drizzle with balsamic vinegar.   Enjoy!!

    Roasted Buffalo Cauliflower Salad

    Veggies that taste like you’re not eating veggies… No brainer!  A little buffalo wing sauce and roasting these in the oven made this cauliflower crisp up and gave it a crunch that made it taste like buffalo chicken bites!  I’m in love!   And as an added bonus, last night’s roasted buffalo cauliflower made for a super yummy lunch today!     Honey Dijon Chicken Salad Wrap (21 Day Fix Friendly)

    When I lived in Soulard there was a little coffee shop that made the very best chicken salad.  I lived off that stuff.  Creamy. Nutty. The chicken was cooked perfectly.  I still get warm fuzzies thinking about it.   Today.  Warm fuzzies.  This lunch was hands down one of the best things I’ve made in a long time.  It was simple and delicious.  Creamy, clean, healthy and hit the spot.  Nothing more.  Nothing less.  Just perfection.     Firecracker Pasta Salad

    Summer.  Holiday weekend.  BBQ’s. Soooooo much food!   I love pasta salad but always eat wayyyyy too much and feel like a brick is in my stomach after.     I whipped up this healthier alternative with a little kick, perfect for those holiday BBQ’s without the guilt!   Enjoy!   Ingredients: 1 box veggie pasta, cooked and cooled  3-4 Roma tomatoes, chopped  1 jalapeño, seeded & minced 3/4 c black beans, rinsed & drained 3/4 c sweet corn 1/2-3/4 c Bolthouse farms Salsa Ramch dressing or 1/2 c salsa mixed with 1/3 c plain Greek yogurt  Directions:  Mix all ingredients in a large bowl.  Drizzle with dressing.  Stir well…

    We challenge ourselves to do a meatless Monday in this house because it gets us out of our grilled chicken and ground turkey comfort zone.  Sometimes I get that “look” from my husband.  The look where I put his plate in front of him and he looks at me with that head cocked suspicious puppy look- like “what are you trying to get me to eat”?     Apple Walnut Salad with Honey Balsamic Vinaigrette

    I love a savory and sweet salad.  Especially when it’s a perfect complement to a big dinner.  This is my Thanksgiving dinner salad this year.  The crispness and crunch of the fresh-off-the-tree apples and the toasted walnuts make an excellent addition to this salad and it will pair nicely with roasted turkey breast, fresh bread, and white wine!     Vegetarian Couscous Salad

    Vegetarian Couscous Salad This is a favorite of mine.  A yummy, one-dish meal, perfect for an on-the-go lunch, or a light, healthy dinner. Ingredients: For the salad: 1 c whole wheat couscous 1 tsp EVOO 1 medium tomato (chopped) 1 c frozen peas (thawed) 1 can kidney beans rinsed & drained 1/2 tsp parsley 1/4 c low fat Feta cheese For the dressing: 3 tbsp EVOO 2 tbsp red wine vinegar 1 tsp oregano 1/4 tsp sea salt 1 tsp basil Directions: Bring 1 1/4 c water to a boil, add tsp of EVOO and couscous.  Stir in, cover and remove from heat.  Let stand 5 minutes.  Spoon into large bowl, add…
