Broccoli Cheddar Stuffed Sweet Potatoes

I think we all know what’s important in life.
Food that you can melt cheese on top of.
Tonight, I wanted a dinner that was simple, flavorful, and didn’t require a lot of effort on my part.  Granted this took almost an hour to cook, prep was about 10 minutes tops.  And the melty cheese part, well that’s a bonus.

Ingredients: 
4 small- medium sweet potatoes
2 lbs chicken breasts, thawed
Herbed chicken seasoning 
1 bag frozen riced broccoli (or separately mince/pulse broccoli in food processor)
4 tbsp shredded cheddar cheese
Directions:
Puncture sweet potatoes with a fork. Wrap in foil.  Bake at 350* for 45 minutes. 
Season chicken with herbed seasoning.  Place in glass baking dish and bake for 30-40 minutes until juices run clear. 
* Chicken and potatoes can bake in the same oven at the same time!
In a skillet, cook broccoli 3-5 minutes until tender.
Shred chicken. Slice open sweet potatoes. 
Stuff with chicken and broccoli mixture. Top with cheddar cheese. 
Pop under broiler for 3-5 minutes until cheese bubbles. 
Serve and enjoy!

1 – 1.5 yellow depending on size of potato

1 red
1/2 blue
