BBQ Salmon Tacos with Homemade BBQ Sauce

Summer.  Fire up that grill.  Get that summer sweet corn out.  It’s time to BBQ!  
If you’ve been following my blog, you know I love a good Taco Tuesday recipe- especially fish tacos. And when it’s summer, I think of BBQ and sweet corn, and zesty, refreshing favors.  Some homemade BBQ sauce, some salmon, some grilled corn tortillas, and fresh cilantro made these just perfection.  And made all of my summer fish taco dreams come true!  I hope you enjoy them as much as I did!  
Ingredients:
4 salmon filets
1 c cooked sweet corn 
2-3 tbsp rough chopped fresh cilantro
Handful of lettuce (I used Costco Kale salad mix) 
Plain Greek yogurt optional (see pic below) 
Corn tortillas 
Directions: 
Baste salmon fillets generously with BBQ sauce.  Grill 10-15 minutes or bake at 415* for 12-16 minutes.  Toss very lightly oiled corn tortillas on the grill one minute each side.  Serve salmon in tortillas topped with lettuce, corn, & cilantro.  May add a dollop of Greek yogurt or chopped jalapeño peppers for extra kick!
