A super simple breakfast and snack muffin recipe that can be whipped up quick is a lifesaver! We baked these the other night for breakfasts and snacks! They’re clean/healthy and nutritious too and perfect for those busy back to school mornings or afternoon snacks! Tis the season. Holiday parties. Booze. Snacks. Booze. Snacks. It’s never ending until January. We’re taking matters into our own hands this year, we hosted our own Christmas party, and the former bartender in me had been dying to stretch my legs and make some yummy drinks. I had two in mind. Pumpkin Spice Waffles
With three kids with different preferences, I have learned that if I give into everyone’s requests I’d be a short order cook with an even shorter temper! So when one kid asks for waffles, and one kid asks for muffins, I make one big batch and put some in muffin tins and some in the waffle maker. Then everyone’s happy! This is the same recipe for my Pumpkin Chocolate Chip mini muffins but the only exception is I left out the chocolate chips. They could go either way. Or add nuts. Or sub pumpkin for banana. I can’t get enough “holiday smell” in my house. It’s an addiction. I put away my pumpkin spice candle yesterday and busted out holiday spice and that cinnamon smell took over my house last night. Does anyone else love coming up with festive recipes for each holiday? Or trying things out from Pinterest? We went for it tonight! And they turned out great! My kiddos love English muffin and sandwich thin mini pizzas and we just had to make them into mummies for Halloween! Ingredients: Whole grain English Muffins or Sandwich Thins Organic tomato/basil pasta sauce or marinara sauce Sliced mozzarella cheese Sliced black olives Directions: Place thins on parchment paper lined sheet or foil (spray with cooking spray). In my house, we love peanut butter. Every week, on the grocery list. Peanut Butter. Spoonfuls on spoonfuls, PBJ’s, protein bites, treats, snacks, ants on a log, etc. You know it. We also love chocolate. When we can combine the two, it’s heaven. These healthy, guilt-free snacks are perfect for that afternoon craving, that post-workout protein need, or that late night sweet tooth that won’t quit. Chocolate Shakeology Protein Bites Because sometimes when you have a snack attack, it has to be a cookie! And when it does, this is a a perfect, healthy, alternative to a sugar-packed, ball of unhealthiness! Ingredients: 1 c quick cook oats 1/2 c all natural peanut butter 1/4 c wildflower honey 1 scoop/packet chocolate Shakeology Directions: Mix all ingredients until combined well in a bowl. Roll into 1″ balls. Refrigerate for 15 minutes. Enjoy! *You can also add 1/4 c flaxseed meal but may need to add a little more honey!
