    Strawberry Shortcake Bites

    “Mooooommmmm!  I’m hungry!!!  Can I have a snack?!” My go-to for my 3 hungry rascals? Protein energy bites.  We usually make plain vanilla or chocolate but we switched it up tonight and went for strawberry shortcake.  A little bit of chia seeds and they turned out perfect!   Ingredients:  1.5 scoops strawberry Shakeology 1/2 scoop vanilla Shakeology  1/2 c natural peanut butter  1/3 c wildflower honey 1.5 c quick oats  1 tbsp chia seeds  Directions:  Combine all ingredients in a bowl.  Mix well.  Roll into 1″ bite sized balls.  Enjoy!

    Firecracker Pasta Salad

    Summer.  Holiday weekend.  BBQ’s. Soooooo much food!   I love pasta salad but always eat wayyyyy too much and feel like a brick is in my stomach after.     I whipped up this healthier alternative with a little kick, perfect for those holiday BBQ’s without the guilt!   Enjoy!   Ingredients: 1 box veggie pasta, cooked and cooled  3-4 Roma tomatoes, chopped  1 jalapeƱo, seeded & minced 3/4 c black beans, rinsed & drained 3/4 c sweet corn 1/2-3/4 c Bolthouse farms Salsa Ramch dressing or 1/2 c salsa mixed with 1/3 c plain Greek yogurt  Directions:  Mix all ingredients in a large bowl.  Drizzle with dressing.  Stir well…

    Enchilada Zucchini Boats

    When you’re trying to eat healthy but you only want tacos and enchiladas.  What do you do? You whip up a clean enchilada mix.  Shove it into some scraped out zucchini top it with a little cheese, bake it, and enjoy!     Protein Pancakes with Chocolate Peanut Butter Drizzle

    When breakfast tastes like dessert it makes for a happy day.  These protein-packed pancakes make my heart happy.   A total win and a great start to Sunday morning!  Enjoy!     Mediterranean Chicken Flatbread Pizza

    Baked Fajita Taco Tuesday

    Every Tuesday needs tacos.  Today I needed tacos.  Baked fajita tacos.     Chocolate Covered Strawberry Shakeology
