I’m just a girl, standing in front of a stove, asking for dinner to make itself. Fortunately this wasn’t quite as difficult and time consuming as I imagined in my mind it would be. Butternut Squash Chicken Stew (Crockpot)

Once that cold air hits and I’m in leggings, boots, and a scarf most days, my cooking shifts to stewy-type meals.   As a momma, I struggle with things that the kids will eat that are flavorful but don’t compromise our healthy eating too.   So I came up with this yummy butternut squash chicken stew and needless to say, everyone was happy.  Nothing like a bowl of hot soup on a cold fall evening! Ingredients:  1 Medium Butternut Squash, peeled and diced into 1 inch cubes 3 medium chicken breasts, thawed 2 cups organic vegetable (or chicken) broth 1 medium red pepper, diced 3/4 c frozen corn 1 tsp…

    Turkey Pumpkin Chili

Sweet & Savory Turkey Pumpkin Chili I don’t know if I’m the only one who cooks like this, but I’ll start thinking up a recipe a week or so before I make it.  I literally let it simmer in my brain.  I think of things I want to add to it, how I want it to taste, what the texture and consistency should be.  Then I get hangry.  I start with the mouthwatering, drooling stuff. And I know I have to make it.  Today I intended to make a chicken butternut squash soup in the crockpot but life got in the way and was saving this chili for the weekend…

    Taco Stuffed Spaghetti Squash

Fall is here.  So much squash.  We have been given large amounts of squash several times in the past few weeks and we’re up to our ears in squash.  Fortunately my kids eat spaghetti & meatballs with spaghetti squash (not always, but we made it work the other night).   But I needed something to do with the rest of the spaghetti squash and I thought I’d take my ground turkey, a little salsa, stuff it and bake it.  And it was everything I dreamed it would be and more!  My husband approved.  He’s not a squash eater by any means so it wasn’t easy to come up with something…

Topped with a little low-cal Greek yogurt ranch and this was absolute heaven!  Enjoy!   For the Cauliflower: 1 lb package frozen cauliflower  1/4 c hot wing sauce – I use Frank’s Red Hot  Coat frozen cauliflower in sauce evenly.  Spread on baking sheet covered in foil and sprayed with…
