Fitness For the Entire Family- Double Time Launch!

As a mommy, a pediatric nurse, and health and fitness coach, one of the biggest questions I am asked is, “How do I make this a healthier lifestyle for my family?”  With childhood obesity rates climbing to now affecting every 1 in 6 children, we as parents need to step up and get our kids active and healthy.  There are so many indoor distractions today- between phones, tv, games, miscellaneous electronics, that don’t keep our kids active.  I’m always looking for new ways to be creative with my kids, with family friendly recipes, and with fitness too, and to teach them the importance of living a healthier lifestyle. I am so excited…

    Bell Pepper Nachos- Low Carb

There comes a time in life where you must make a decision.  Are you going to celebrate Taco Tuesday with amazing flavor and flair… or are you going to let it pass you by? For us, Taco Tuesday is a regular occurrence each week, and don’t get me wrong- we never get tired of tacos, but sometimes we like a little variety in what we eat every Tuesday.  And occasionally we switch up our nutrition routine and do a little low-carb here and there depending on our goals and results we’re working toward.  This week was one of those weeks.   This gal could live on chips and salsa alone…

Healthy Organic Smoothie for Kids- What is Daily Sunshine?

As a mom and a pediatric nurse, want to hear something that freaks me out!?  Today, about one in five school-aged children (ages 6–19) has obesity.  The obesity rates in children has TRIPLED since the 70’s.  And our children are developing more preventable diseases now than ever before.  Their activity levels have declined and their obesity rates have increased.  (Read the latest CDC data HERE) And a big majority of that is due to nutrition.  We’re failing our children, momma’s and dad’s.  And something has to change.   Let’s be honest, as a momma, feeding my kids healthy options isn’t always the easiest.  Some days we count veggie chips as…

    Roasted Veggies- Whole 30 Approved

One thing about meal prepping is having easy sides to pick and choose from.  Those tend to be more time consuming than preparing an actual meal at times.  One of my favorite things to prep on a Sunday is a pan of roasted veggies that will carry us through for a couple meals.  I do this a couple times each week, and they always turn out amazing. Ingredients: 3 small/medium sweet potatoes, peeled and diced 2 large zucchini, sliced and quartered 1-2  heads of broccoli*, rough chopped 1 tbsp Extra Virgin Olive Oil Himalayan Sea Salt Cracked pepper Various herbs/seasonings (I use oregano, parsley, basil, typically) Directions:  Toss veggies/potatoes…

    Breakfast Quiche- Whole 30 Approved

When I started Whole 30 I thought, how am I going to make it through on scrambled eggs and grilled chicken.  I need more variety in my life.  Around day 9 of eating mostly scrambled eggs, potatoes, and chicken I new I needed to spice things up or I was going to get bored.  And reach for the chips.  And I’m determined to get through these 30 days with no cheats.  Day 19 & going strong.   So I whipped up a yummy “breakfast” quiche, I say breakfast lightly because this has been my dinner twice this week, it’s so good.  Sweet potato crust, ground turkey, and plenty of veggies. …
