    Beef Stew with Sweet Potatoes- Whole 30 Friendly

    I’m just a girl, standing in front of a stove, asking for dinner to make itself. Fortunately this wasn’t quite as difficult and time consuming as I imagined in my mind it would be. And keeping it simple and CROCKPOT friendly made it that much easier on our busy schedules.     Once that cold air hits and I’m in leggings, boots, and a scarf most days, my cooking shifts to stewy-type meals.   As a momma, I struggle with things that the kids will eat that are flavorful but don’t compromise our healthy eating too.   So I came up with this yummy butternut squash chicken stew and needless to say, everyone was happy.  Nothing like a bowl of hot soup on a cold fall evening!     Fall is here.  So much squash.  We have been given large amounts of squash several times in the past few weeks and we’re up to our ears in squash.  Fortunately my kids eat spaghetti & meatballs with spaghetti squash (not always, but we made it work the other night).   But I needed something to do with the rest of the spaghetti squash and I thought I’d take my ground turkey, a little salsa, stuff it and bake it.  And it was everything I dreamed it would be and more!  My husband approved.  He’s not a squash eater by any means so it wasn’t easy to come up with something…

    Roasted Buffalo Cauliflower Salad

    Veggies that taste like you’re not eating veggies… No brainer!  A little buffalo wing sauce and roasting these in the oven made this cauliflower crisp up and gave it a crunch that made it taste like buffalo chicken bites!  I’m in love!   And as an added bonus, last night’s roasted buffalo cauliflower made for a super yummy lunch today!     BBQ Pulled Chicken Stuffed Sweet Potatoes

    Summer = BBQ.  I always eat too much BBQ and feel miserable afterward- who’s with me?  So this combo of BBQ pulled chicken, sweet potato, and a little bit of sweet, heat, and cilantro hit the spot!   My crockpot was perfect for the chicken, 4-6 hours on low and it pulled apart perfectly.  Sitting on the patio, a nice cold beverage in hand, a yummy side salad, and this makes the perfect summer meal!     Honey Peanut Soy Glazed Salmon

    The perfect harmony of soy, peanut, and honey.  Just when I think Mexican cuisine is my favorite, something like this takes me back to loving Asian inspired foods.   Today’s lunch was super simple.  Honey, peanut, and soy glazed salmon with just a touch of ginger. Some stir fry veggies, over a bed of red quinoa and this momma is set!   Ingredients:  4 salmon filets, thawed  1 16oz bag stir fry veggies  Quinoa, cooked  1 tbsp liquid aminos (or low sodium, natural soy sauce) 1 tbsp PB2  1 tbsp wildflower honey 1/2 tsp ground ginger.  Directions:  Lightly dust salmon filets with ginger.  Mix PB2, aminos, and honey together in…

    Honey Dijon Chicken Salad Wrap (21 Day Fix Friendly)

    When I lived in Soulard there was a little coffee shop that made the very best chicken salad.  I lived off that stuff.  Creamy. Nutty.     21 Day Fix Turkey Taco Cups

    The easiest of easy, healthy, and 21 Day Fix friendly dinners.  10 minutes skillet to table.  And always a hit with the whole family.  Only 6 ingredients total!  Enjoy and share!   Ingredients: 1 lb lean ground turkey  1 c of your favorite salsa (I used organic chipotle lime from Aldi) 1 can black beans 1 c frozen corn, thawed  Romaine lettuce leaves  Greek yogurt  Directions: In a skillet over medium-high heat, brown turkey with salsa.  Add beans and corn.  Mix well.  Serve in lettuce leaves and top with Greek yogurt.  Enjoy!   For 21 Day Fix: 1 red 1 yellow 1 green (3 leaves)  1/4 purple
