These are quite possibly my favorite grab-and-go muffins that taste heavenly, require a minimum of ingredients, and give you a filling serving of protein, veggies, carbs, and an optional add in of healthy fats too.     Strawberry Shortcake Bites

    “Mooooommmmm!  I’m hungry!!!  Can I have a snack?!” My go-to for my 3 hungry rascals? Protein energy bites.  We usually make plain vanilla or chocolate but we switched it up tonight and went for strawberry shortcake.  A little bit of chia seeds and they turned out perfect!   Ingredients:  1.5 scoops strawberry Shakeology 1/2 scoop vanilla Shakeology  1/2 c natural peanut butter  1/3 c wildflower honey 1.5 c quick oats  1 tbsp chia seeds  Directions:  Combine all ingredients in a bowl.  Mix well.  Roll into 1″ bite sized balls.  Enjoy!

    Sautéed Kale and Tempeh Salad

    We challenge ourselves to do a meatless Monday in this house because it gets us out of our grilled chicken and ground turkey comfort zone.  Sometimes I get that “look” from my husband.  The look where I put his plate in front of him and he looks at me with that head cocked suspicious puppy look- like “what are you trying to get me to eat”?     Protein Pancakes with Chocolate Peanut Butter Drizzle

    When breakfast tastes like dessert it makes for a happy day.  These protein-packed pancakes make my heart happy.   A total win and a great start to Sunday morning!  Enjoy! Ingredients:  For the Pancakes: 1 cup Kodiak Protein Pancake Mix  1 scoop vanilla Shakeology (optional)  1 c Vanilla unsweetened almond milk  For the Chocolate/Peanut Butter Drizzle:  3 tbsp vanilla unsweetened almond mik 2 tbsp natural chunky peanut butter 1 tbsp chocolate Shakeology (or chocolate protein isolate) Chocolate chips optional 🙂  Directions:  Prepare pancake batter according to package.  Pour onto medium heat griddle into 4-5″ dollops.   In a small bowl, microwave almond milk and peanut butter for approximately 15 seconds.…
