    This soup came to fruition after looking through my fridge/pantry, deciding I needed to go grocery shopping, but with a barfy kid, feeling quarantined to the house, I decided I needed to use up what was left of my previous week’s meal prep/grocery trip first.     As a mommy, a pediatric nurse, and health and fitness coach, one of the biggest questions I am asked is, “How do I make this a healthier lifestyle for my family?”  With childhood obesity rates climbing to now affecting every 1 in 6 children, we as parents need to step up and get our kids active and healthy.  There are so many indoor distractions today- between phones, tv, games, miscellaneous electronics, that don’t keep our kids active.  I’m always looking for new ways to be creative with my kids, with family friendly recipes, and with fitness too, and to teach them the importance of living a healthier lifestyle.     The Final Countdown- 8 Week Fitness Bootcamp 11/6-12/31

    It’s the final countdown… did you sing it like you remember it from the 80’s?!   Tell me if you’ve been here before.  That first week of a brand new year and ambition is high.  We set lofty goals.  We’re determined.  We want to lose X amount of pounds and inches.  We envision this rockstar summer body.  We are going to CRUSH it this year…. and then St. Patty’s day happens.  Then Easter candy.  Memorial Day, summer BBQ’s, Labor Day, Halloween Candy… and well, goals didn’t quite get met.  Progress was, well…  Think about this…  There are 9 weeks left in 2017… If you lose 3 pounds per week that’s 27…

    5 Ingredient Taco Stuffed Peppers

    No frills.  No B.S.  5 simple, clean ingredients, for a simple, clean meal.  If you want to add some extra spice to your taco meat, try my made-from-scratch taco seasoning below.  Ingredients:   4 medium bell peppers 1 c cooked quinoa 1 lbs lean ground turkey/chicken 1/2 c natural salsa 4 tbsp low fat Mexican shredded cheese Directions:  Slice peppers in half, remove seeds.  Bake in oven for 10 min at 350*.  While peppers are baking, brown ground turkey/chicken in skillet and add salsa.  Mix in 1 c cooked quinoa when turkey/salsa mixture is cooked.  Scoop mixture into peppers, overflowing.  Top with 1 tbsp cheese each.  Return to oven and bake…
