    When you’re trying to eat healthy but you only want tacos and enchiladas.  What do you do? You whip up a clean enchilada mix.  Shove it into some scraped out zucchini top it with a little cheese, bake it, and enjoy!     Mediterranean Chicken Flatbread Pizza

    Baked Fajita Taco Tuesday

    Every Tuesday needs tacos.  Today I needed tacos.  Baked fajita tacos.     Lentil Stew (Crockpot)

    Fat Tuesday Jambalaya

    The old bartending days.  Down in Soulard.  Oooh I loved working Mardi Gras!  Tons of people.  Lots of tips.     Seven Layer Taco Dip (Clean Version)

    I put my hand upon my chip.  When I dip you dip we dip!   Happy taco Tuesday!  One of my favorite things in the entire world is tacos!  And dips.  So it only made sense to combine the two!  This is the vegetarian version but you can add ground beef or turkey and layer it on the bottom for some added protein!  A little fresh cilantro on top and this is a healthy appetizer or a one dish dinner!     Chicken, Bean, and Veggie Stew

    Buffalo Chicken Stuffed Sweet Potatoes

    Adam and Eve.  Romeo and Juliet.  Beyoncé and Jay-Z.  Peanut butter and jelly.  Buffalo chicken and sweet potatoes. Ok, so that last pair seemed questionable at first but I thought about all of the things I loved.  Chicken.     Apple Walnut Salad with Honey Balsamic Vinaigrette

    I love a savory and sweet salad.  Especially when it’s a perfect complement to a big dinner.  This is my Thanksgiving dinner salad this year.  The crispness and crunch of the fresh-off-the-tree apples and the toasted walnuts make an excellent addition to this salad and it will pair nicely with roasted turkey breast, fresh bread, and white wine!
