    Taco Stuffed Spaghetti Squash

    Fall is here.  So much squash.  We have been given large amounts of squash several times in the past few weeks and we’re up to our ears in squash.  Fortunately my kids eat spaghetti & meatballs with spaghetti squash (not always, but we made it work the other night).   But I needed something to do with the rest of the spaghetti squash and I thought I’d take my ground turkey, a little salsa, stuff it and bake it.  And it was everything I dreamed it would be and more!  My husband approved.  He’s not a squash eater by any means so it wasn’t easy to come up with something…

    Best Fish Tacos Ever

    Roasted Buffalo Cauliflower Salad

    Veggies that taste like you’re not eating veggies… No brainer!  A little buffalo wing sauce and roasting these in the oven made this cauliflower crisp up and gave it a crunch that made it taste like buffalo chicken bites!  I’m in love!   And as an added bonus, last night’s roasted buffalo cauliflower made for a super yummy lunch today!     BBQ Pulled Chicken Stuffed Sweet Potatoes

    Summer = BBQ.  I always eat too much BBQ and feel miserable afterward- who’s with me?  So this combo of BBQ pulled chicken, sweet potato, and a little bit of sweet, heat, and cilantro hit the spot!   My crockpot was perfect for the chicken, 4-6 hours on low and it pulled apart perfectly.  Sitting on the patio, a nice cold beverage in hand, a yummy side salad, and this makes the perfect summer meal!     21 Day Fix Turkey Taco Cups

    The easiest of easy, healthy, and 21 Day Fix friendly dinners.  10 minutes skillet to table.  And always a hit with the whole family.  Only 6 ingredients total!  Enjoy and share!   Ingredients: 1 lb lean ground turkey  1 c of your favorite salsa (I used organic chipotle lime from Aldi) 1 can black beans 1 c frozen corn, thawed  Romaine lettuce leaves  Greek yogurt  Directions: In a skillet over medium-high heat, brown turkey with salsa.  Add beans and corn.  Mix well.  Serve in lettuce leaves and top with Greek yogurt.  Enjoy!   For 21 Day Fix: 1 red 1 yellow 1 green (3 leaves)  1/4 purple

    Chili-Lime Fish Tacos

    Some people live for Friday.  This lady lives for taco Tuesday.  Switching it up this week for some zesty fish tacos.  Easy peasy lime squeezie!  Enjoy!   Ingredients: 2 tilapia filets 1/2 tbsp chili powder 1 tsp cumin 1/2 tsp garlic powder  1/4 tsp sea salt Juice of 1/2 lime Other half of lime sliced  Directions:  Preheat oven to 400*.  Spray a foil-lined cookie sheet with olive oil.  Place thawed filets on sheet.  Squeeze lime juice over fish. Mix dry spices together.  Rub evenly onto fish. Place lime slices on top.  Bake 15-20 minutes until cooked through.  Serve in corn tortillas, topped with salsa,  and beans & rice on the…

    Crockpot Salsa Chicken Tostadas

    My favorite food group is salsa.  Hands down.  It’s my favorite condiment.  My favorite dip.  I eat it on eggs.  On top of a turkey burger.  And I use it as a marinade.  And taco Tuesday is one of my favorite days of the week because of salsa.   This is one of my favorite creations.  Easy.  Simplified.  Clean.  And crockpot friendly.  Perfect for a quick, healthy meal, and to satisfy those taco cravings!  Enjoy!
