    Mushrooms… yay? Or nay? I’m a total yay. In my eggs, soup, on my pizza. In tacos- y’all Mission Taco Joint has THE BEST portobello mushroom tacos! I’m a sucker for all things mushrooms. So to add them into a breakfast wrap to give it a bit more of a punch, this is my jam! Powerhouse of flavor. Delish combination. 2 servings of veggies in each wrap. And a treat for your savory taste buds! Recipe below!     You had me at “10 Minute Breakfast”! My kiddos will sleep in, lounge on the couch for an hour, and then IMMEDIATELY decide they are STARVING and need to eat RIGHT NOW!!! Quick, healthy breakfasts are totally our jam. However, they default to toaster waffles and would prefer pop-tarts or donuts where I’m more of a “made from scratch” sort of mom. Don’t get me wrong, we indulge every now and then, but if I can whip up a “healthier” version of a lot of things, I will. Donuts are one of our favs in this house too.     These turned out to be just perfect!  And when you can get away with serving your kids “chips” for dinner, it’s a win-win!  Keep an eye on these while you’re cooking, if they’re cut too thin they can crisp up quickly.  I tried turning the temp up a bit to cook them quicker and they did ok, but cooking low and slow is ideal. Zucchini Chips Ingredients:  2 large zucchini, sliced thinly with mandolin slicer or paring knife (be careful!) 3-4 tsp EVOO Sea salt to taste Instructions:  Preheat oven to 225*.  Slice zucchini thin.  Pat dry with paper towel.  Drizzle lightly with oil,  Bake on parchment lined cookie sheets…

    We had some of THE BEST tacos at Bakersfield while we were in Nashville this past weekend.  I mean, wow.  Hand made corn tortillas, mahi, braised spare rib, marinated portabella… I was in total heaven.  We ate there twice.  Then we found Nashville Street Tacos… agghhh!  More deliciousness! I couldn’t get enough southwest style fare (yeah, in Nashville, I know).  So when we got home I decided I was going to throw in a few similar style southwestern flair dinners for this weeks menu.     Ohhhhhhhh do we love fajitas in our house!  I’ve tried them every which way but I always come back to the “old faithful” crockpot fajitas.  These are super simple, clean, and low carb too!  And always leave us full and satisfied!     Vegetarian Couscous Salad This is a favorite of mine.  A yummy, one-dish meal, perfect for an on-the-go lunch, or a light, healthy dinner. Ingredients: For the salad: 1 c whole wheat couscous 1 tsp EVOO 1 medium tomato (chopped) 1 c frozen peas (thawed) 1 can kidney beans rinsed & drained 1/2 tsp parsley 1/4 c low fat Feta cheese For the dressing: 3 tbsp EVOO 2 tbsp red wine vinegar 1 tsp oregano 1/4 tsp sea salt 1 tsp basil Directions: Bring 1 1/4 c water to a boil, add tsp of EVOO and couscous.  Stir in, cover and remove from heat.  Let stand 5 minutes.  Spoon into large bowl, add…
