Easy Fajita Tacos Ingredients: 5-6 medium/large chicken breasts 2 red peppers, sliced 2 green peppers, sliced 1/2 onion, sliced (optional) For the Taco Seasoning: 1 tsp chili powder 1 tsp cumin 1 tsp garlic powder 1 tsp oregano 1/4 tsp sea salt Mix…

Chicken, Bean, and Veggie Stew
I love a soupy stew on a cold snowy day! This is a perfect snow-day stew. My girls, outside playing in the snow, little feets getting froze, little noses turning from pink to red, cheeks all sorts of rosy, and mittens getting soggy. Kids barging in through the back door demanding warmth and shuffling off their clothes and crawling under warm blankets on the couch. “Mooooommmmm! Can we have some soup and some hot chocolate?” You betcha. Ingredients: 3 large chicken breasts, thawed and diced 3 ribs celery, diced 1/2 cup baby carrots, shredded 1 can black beans, rinsed and drained 1 can chickpeas, rinsed and drained 1…

Buffalo Chicken Stuffed Sweet Potatoes
Adam and Eve. Romeo and Juliet. BeyoncĆ© and Jay-Z. Peanut butter and jelly. Buffalo chicken and sweet potatoes. Ok, so that last pair seemed questionable at first but I thought about all of the things I loved. Chicken. Buffalo wing sauce. Sweet potatoes. It HAD to be good. Well, turns out I have a new favorite way to stuff my sweet potatoes! Inspired by one of the lovely ladies in my current fitness and nutrition accountability group, I had to try my spin on these. So, you can do this one of two ways: Slow-cook the chicken in a little buffalo sauce and ranch seasoning or Bolthouse Farm’s Greek…

Sesame Orange Chicken: Clean Version
It’s Friday night. I want take out. The old me would’ve called out for Chinese delivery. I still have dreams of General Tso’s chicken. Don’t get me wrong, I’m all for indulging and “treat” meals, but the sodium that’s loaded into Chinese takeout is enough to make my rings too tight for a week. So instead of giving into my cravings, I had to come up with something that I could feel good about eating, feeding to the kids, and that would leave me full and not digging in the fridge for seconds an hour after eating it. Which by the way, why is it when you eat Chinese takeout…

Meal Prep Madness
We are the epitome of busy. We have three girls ages 8, 5, and 3. My husband travels some for work. I am a nurse (not currently practicing). I run a business from my home helping people meet their fitness and nutritional goals. We workout daily. I grocery shop. I run monthly accountability groups for my clients. We prepare our meals fresh. We have even been known to do fitness competitions. My life is a constant whirlwind. I need a cleaning service. And a laundry service. Most days I don’t have time to prepare for what is thrown at me. But I’ve come to learn how important it is to…

Black Bean Lentil Stew
On Sunday’s we crockpot. Football, crisp autumn air, crunching in the leaves, wearing scarves, eating soups and stews out of cold weather bowls and getting that warm, fuzzy feeling. This meal was created by total happenstance. I wanted a crockpot dinner but didn’t have a plan so I worked with what I had. And it worked. My husbands words: “Oh this is good. It’s not to tomatoey. I like it.” He’s weird about tomatoes. So it passed the test and now have another crockpot recipe to add to my collection. This made for a yummy one dish meal and I topped mine with a dollop of low fat…

Creamy Chicken and Rice Soup (Crockpot)
Three year old with a high fever and a tummy ache. Not good. Naps. Snuggles. Blankies. Movies. Repeat. It’s time for my cure-all. Fool-proof, tummy soothing, chicken soup. When I can throw it all in the crock pot that’s even better because that means I get more snuggle time with her. And that’s key. Whether it’s an upset tummy, the need for a new clean eating recipe, a kid-friendly meal, or an easy crock pot fix, this one has family meal written all over it and is a big favorite in our house, not just on sick days. Chicken and Rice Soup Ingredients: 4 small-medium boneless chicken breasts, thawed…

Chicken Stuffed Peppers- Two Ways
As a parent you’re always trying to stuff something into food for your kids to eat it. Disguising muffins as cupcakes but packing them with carrots and zucchini. Adding flaxseed to oatmeal. Blending up extra veggies into a pizza sauce or even making cauliflower nuggets! All things I’ve tried and have been successful with when it comes to what my kids eat! Fortunately I have kids who love their veggies but we’re hard up to get them to eat proteins. So shredded chicken stuffed into these peppers was a hit for us! I love them with quinoa, my husband is a brown rice fan. The girls ate both š …

Easy Chicken Burrito Bowls
We had some of THE BEST tacos at Bakersfield while we were in Nashville this past weekend. I mean, wow. Hand made corn tortillas, mahi, braised spare rib, marinated portabella… I was in total heaven. We ate there twice. Then we found Nashville Street Tacos… agghhh! More deliciousness! I couldn’t get enough southwest style fare (yeah, in Nashville, I know). So when we got home I decided I was going to throw in a few similar style southwestern flair dinners for this weeks menu. Last night we did a deconstructed chicken burrito. It was heavenly. One happy husband, and three happy kids. And I had to stop myself from going…
