    Creamy Chicken Enchiladas (Healthier version)

      Some nights you just need a comfort food, soul feeding, delicious pan of creamy enchiladas.  It’s been years since I made a pan of enchiladas and to say we were due was an understatement.  As we embark on a 3 week- super healthy fitness & nutrition regimen in prep for our Punta Cana vacation on April 23rd, this was a healthier “last hoorah” as a pre-gift to ourselves for committing to hard work for 3 weeks.     Strawberry Balsamic Chicken Salad

      My favorite salad.  Simple. Clean.  Healthy.  Something about strawberries and balsamic vinegar that makes a delicious combination!   Ingredients: 1 chicken breast, grilled 2 c spinach  1 c diced strawberries 1 tbsp feta cheese  1 tbsp chopped walnuts  2 tsp chia seeds  2 tsp balsamic vinegar  Directions:   Place spinach in bowl.  Add walnuts, feta, diced chicken breast, chia seeds, and strawberries.   Drizzle with balsamic vinegar.   Enjoy!!

    Iron Skillet Chicken- Oven Roasted

      Winner winner, Sunday chicken dinner.  Everyone needs their go-to Sunday dinner.  When the in-laws are coming over.  When you don’t want to prep in the kitchen all day.  When you can one-and-done it.  And this is my new go-to.  It’s aromatic.  It’s crispy.  It’s juicy.  It’s pure heaven.     Butternut Squash Chicken Stew (Crockpot)

    Roasted Buffalo Cauliflower Salad

    Veggies that taste like you’re not eating veggies… No brainer!  A little buffalo wing sauce and roasting these in the oven made this cauliflower crisp up and gave it a crunch that made it taste like buffalo chicken bites!  I’m in love!   And as an added bonus, last night’s roasted buffalo cauliflower made for a super yummy lunch today!     BBQ Pulled Chicken Stuffed Sweet Potatoes

    Summer = BBQ.  I always eat too much BBQ and feel miserable afterward- who’s with me?  So this combo of BBQ pulled chicken, sweet potato, and a little bit of sweet, heat, and cilantro hit the spot!   My crockpot was perfect for the chicken, 4-6 hours on low and it pulled apart perfectly.  Sitting on the patio, a nice cold beverage in hand, a yummy side salad, and this makes the perfect summer meal!     Maple Honey BBQ Sauce

    When it’s summer, we BBQ.  And you know this semi-crunchy, clean eating momma just had to whip up a made-from-scratch recipe to start basting our goodies in for the grill.  This was super easy, just enough zest, and is great for dipping too!  Ingredients: 3 tbsp tomato paste 1 8 oz can tomato sauce 1 tbsp chili powder  1 tbsp paprika 2 tbsp pure maple syrup 2 tbsp wildflower honey 1 tsp chipotle chili powder  Sea salt & ground black pepper to taste Directions:   Mix all ingredients in a small saucepan.  Simmer 10-15 minutes.  Baste meats, poultry, salmon, prior to grilling, or use for dipping!  Enjoy!

    Honey Dijon Chicken Salad Wrap (21 Day Fix Friendly)

    When I lived in Soulard there was a little coffee shop that made the very best chicken salad.  I lived off that stuff.  Creamy. Nutty. The chicken was cooked perfectly.  I still get warm fuzzies thinking about it.   Today.  Warm fuzzies.  This lunch was hands down one of the best things I’ve made in a long time.  It was simple and delicious.  Creamy, clean, healthy and hit the spot.  Nothing more.  Nothing less.  Just perfection.     Mediterranean Chicken Flatbread Pizza

    If your “diet” or meal plan doesn’t call allow for pizza, you’re doing it wrong.  When I start a new fitness program, when we meal prep, when we do a lot of what we do, it involves pizza.  And if it can’t- well, that doesn’t make for a happy mommy!  Tonight, this momma is studying and I needed an easy dinner that would fill me up.  I whipped this up in minutes and baked it for 13 and voila!   Daddy took the three crazy kids to the mall playground to burn some energy and scream somewhere else and this momma cracked open an ice cold La Croix, and ate…
