“Mommy, are you crying?! Is everything okay?” Maybe it’s because we’d just finishing reading “On the First Day of Kindergarten”… Or maybe it was that as I walked into their rooms to tuck them in I saw their backpacks lined up against the wall, ready for a new year of memories… And this time, there were three. When the monsters awake from their slumber, it’s always a guess what they’re going to want for breakfast. They’re imdivually picky and equally hard to please so it takes effort to find something they all agree upon. I was pleased they all love these yummy chocolate banana granola bites aka mini muffins! They’re gluten free and no added sugar too! Kid Favorite Mini Muffins
A super simple breakfast and snack muffin recipe that can be whipped up quick is a lifesaver! We baked these the other night for breakfasts and snacks! They’re clean/healthy and nutritious too and perfect for those busy back to school mornings or afternoon snacks! Kid Favorite Blueberry Muffins: Ingredients: 1.5 c quick cook oats 1/2 c whole wheat or almond flour 1 tsp baking powder 1/2 tsp cinnamon 1 large mashed banana 1 c vanilla unsweetened almond milk 1/4 c honey 1 egg, beaten 1/2 c blueberries (or chopped strawberries, blackberries, or 3 tbsp chocolate chips! 😉) Pinch of sea salt Directions: Mix everything together in a bowl.
