    Enchilada Zucchini Boats

When you’re trying to eat healthy but you only want tacos and enchiladas.  What do you do? You whip up a clean enchilada mix.  Shove it into some scraped out zucchini top it with a little cheese, bake it, and enjoy! My husband gave me the eyebrow- you know, the one that The Rock used to dish out during those old school wrestling days?  So I cautiously set his plate down hoping for the best.  And he ate two boats.  Proud moment right there! These turned out so yummy!  I hope you enjoy!   Ingredients:   3 medium zucchini or yellow squash, halved and seeds scraped out (save the insides…

    Sautéed Kale and Tempeh Salad

We challenge ourselves to do a meatless Monday in this house because it gets us out of our grilled chicken and ground turkey comfort zone.  Sometimes I get that “look” from my husband.  The look where I put his plate in front of him and he looks at me with that head cocked suspicious puppy look- like “what are you trying to get me to eat”? Well.  For a man who grew up his whole life hunting and eating wild game, I’m pretty impressed when he tries what I make, even if it goes against his caveman ways! Kale and tempeh sautée was one that I didn’t expect him to…

    The Skin You’re In…

The skin we’re in. Thick. Thin. Pale. Tan. Brown. White. Freckled. Dotted with cellulite. Lined with stretch marks. Wrinkly. Shiny. We’re so quick to judge ourselves on appearances.   But how many of us can say that we’re comfortable in that skin. That we’re getting rid of judging, and moving onto acceptance. It’s taken me a lot of years to get to this point. To be comfortable in my body. To love the cellulite and the imperfections and the wrinkles.   I didn’t always. So I decided one day to ask for help. I was tired of being tired, being self conscious, and not getting the results I wanted from…
