Chocolate Pumpkin Protein Muffins- Kid Favorite!

It’s a good feeling as a mother when you find a recipe that your kiddos love.  Especially if it’s healthier and packs in some secret fruit and veggie power.

When they ask, “Mom, can you make those chocolate muffins?” and they think they’re getting a treat, it makes this momma smile!

I packed these muffins with pumpkin, banana, some cocoa powder, egg, oat, and some kid-friendly protein powder too for an extra boost.

Yield: 24 Mini Muffins

Ingredients:

1 large banana, mashed

1 cup pumpkin pureé

2 c quick cook oats

2 scoops kid protein/veggie shake mix (we use chocolate Daily Sunshine)

3 eggs

3 tbsp pure organic maple syrup or can sub honey

2 tbsp cocoa powder

1/4 c dark chocolate chips

1 tsp aluminum free baking powder

Directions:
In a large bowl, mix banana, pumpkin, eggs, and syrup/honey.  Add in oats, protein, cocoa powder, baking powder, and dark chocolate chips.  Mix well.  Spoon into mini muffin tin.  Bake at 350* for 15-18 minutes until toothpick inserted comes out clean.

Cool on wire rack for 5-10 minutes.  Enjoy!
