
Baked Fajita Taco Tuesday
Every Tuesday needs tacos. Today I needed tacos. Baked fajita tacos. No guilt. Enough flavor to last me until next Tuesday! We made a big batch. Homemade taco seasoning too. And we found some yummy Flat Out multigrain wraps at Costco that are only 90 calories, 18 g carbs, and 9 g protein! They made perfect soft tacos! Enjoy and feel free to share!
Easy Fajita Tacos
Ingredients:
5-6 medium/large chicken breasts
2 red peppers, sliced
2 green peppers, sliced
1/2 onion, sliced (optional)
For the Taco Seasoning:
1 tsp chili powder
1 tsp cumin
1 tsp garlic powder
1 tsp oregano
1/4 tsp sea salt
Mix together in small bowl and use as all purpose seasoning.
Directions:
Thaw chicken and season on both sides with seasoning. Slice peppers and place on top of chicken. Bake at 350* for 35-40 minutes. Serve on a bed of lettuce in a wrap, topped with salsa and shredded cheese or plain low fat Greek yogurt. Avocado optional too!
