    BBQ Pulled Chicken Stuffed Sweet Potatoes

    Summer = BBQ.  I always eat too much BBQ and feel miserable afterward- who’s with me?  So this combo of BBQ pulled chicken, sweet potato, and a little bit of sweet, heat, and cilantro hit the spot!   My crockpot was perfect for the chicken, 4-6 hours on low and it pulled apart perfectly.  Sitting on the patio, a nice cold beverage in hand, a yummy side salad, and this makes the perfect summer meal!     Maple Honey BBQ Sauce

    When it’s summer, we BBQ.  And you know this semi-crunchy, clean eating momma just had to whip up a made-from-scratch recipe to start basting our goodies in for the grill.  This was super easy, just enough zest, and is great for dipping too!  Ingredients: 3 tbsp tomato paste 1 8 oz can tomato sauce 1 tbsp chili powder  1 tbsp paprika 2 tbsp pure maple syrup 2 tbsp wildflower honey 1 tsp chipotle chili powder  Sea salt & ground black pepper to taste Directions:   Mix all ingredients in a small saucepan.  Simmer 10-15 minutes.  Baste meats, poultry, salmon, prior to grilling, or use for dipping!  Enjoy!

    Baked Fajita Taco Tuesday

    Every Tuesday needs tacos.  Today I needed tacos.  Baked fajita tacos.     Apple Walnut Salad with Honey Balsamic Vinaigrette

    I love a savory and sweet salad.  Especially when it’s a perfect complement to a big dinner.  This is my Thanksgiving dinner salad this year.  The crispness and crunch of the fresh-off-the-tree apples and the toasted walnuts make an excellent addition to this salad and it will pair nicely with roasted turkey breast, fresh bread, and white wine!     Gluten Free Chicken Noodle Soup
