Chipotle Lime Fish with Citrus Rice
I think we found a winner. Competition prep time again and you know what that means? Tilapia for days! My husband is thrilled (insert sarcastic eye roll here). He’s not a seafood lover. So, I have to be creative in order to get him to eat it!
When we were in Florida the first week of January, they were sampling some chipotle rubbed salmon at the fresh market. It was delicious. But he’s not a salmon fan. So I whipped up a little chipotle like marinade and soaked the tilapia in it for a bit, and it turned out excellent! Paired with my own little citrus rice creation and some roasted asparagus and it was excellent. A winner if I say so myself, and as for Luke? Clean plate!
Chipotle Lime Fish
Ingredients:
4 tilapia filets, thawed
Marinade:
Juice of 2 limes
1 tsp coriander
2 tsp chipotle chili powder
1/4 tsp sea salt
2 tbsp chopped fresh cilantro
Directions:
Place thawed fish in ziploc bag or glass dish. Combine ingredients for marinade and pour over fish. Marinade for 3-4 hours. Bake fish for 13-18 minutes at 415*.
Serve with citrus rice, roasted veggies, or a yummy salad. Enjoy!
