    ❤️🌮🥘 EASY DINNER RECIPE!!! 🥘🌮❤️ What do you do when you’re not feeling so hot and it’s  Taco Tuesday ? You turn your weekly taco night into soup! This took all of 5 minutes to throw together.  The combination of black beans, roasted chicken, and juicy tomato, ohhh it was good!     Creamy Chicken Enchiladas (Healthier version)

      Some nights you just need a comfort food, soul feeding, delicious pan of creamy enchiladas.  It’s been years since I made a pan of enchiladas and to say we were due was an understatement.  As we embark on a 3 week- super healthy fitness & nutrition regimen in prep for our Punta Cana vacation on April 23rd, this was a healthier “last hoorah” as a pre-gift to ourselves for committing to hard work for 3 weeks.     Butternut Squash Chicken Stew (Crockpot)

    Once that cold air hits and I’m in leggings, boots, and a scarf most days, my cooking shifts to stewy-type meals.   As a momma, I struggle with things that the kids will eat that are flavorful but don’t compromise our healthy eating too.   So I came up with this yummy butternut squash chicken stew and needless to say, everyone was happy.  Nothing like a bowl of hot soup on a cold fall evening!     Chipotle Lime Fish with Citrus Rice

    I think we found a winner.  Competition prep time again and you know what that means?  Tilapia for days!  My husband is thrilled (insert sarcastic eye roll here). He’s not a seafood lover.  So, I have to be creative in order to get him to eat it! When we were in Florida the first week of January, they were sampling some chipotle rubbed salmon at the fresh market.  It was delicious.  But he’s not a salmon fan.  So I whipped up a little chipotle like marinade and soaked the tilapia in it for a bit, and it turned out excellent!  Paired with my own little citrus rice creation and some…

    Roasted Balsamic Veggies

    Balsamic vinegar is my jam.  I eat it on a lot of things.  I’m weird like that.  Salad. Chicken. Rice. Quinoa. Steak. Tilapia (see, weird).  So I had to do it on veggies.  Ok. One word. Delish.  These turned out great and made a perfect side for tonight’s roasted turkey breast.  Ingredients:  2 large zucchini, quartered 2 sweet potatoes, peeled & diced 2 carrots, peeled & diced  2 green peppers, chopped  1 onion, roughly chopped  1/4 c balsamic vinegar 2 tbsp EVOO  1 tbsp chopped rosemary  Sea salt & black pepper  Directions:  Chop all veggies.  Mix vinegar, oil, and spices together.  Toss together in a large bowl.   Bake at…
