Vegetarian Quinoa Black Bean Bites
One of my favorite recipes and perfect for meatless Monday! We try to limit our red meat intake to once/week in this house and try to add a vegetarian day as well. The added protein from the black beans and the quinoa really helps to fill up from these delicious little bites of yumminess! Plus, the kiddos love them, they’re quick, easy, and make for a great lunchbox treat too!
Ingredients:
3/4c uncooked quinoa (I use Trader Joe’s organic white quinoa)
1 can low sodium black beans
3/4c salsa
4-5 mini sweet peppers or 1/2 c diced green peppers

3/4 c shredded low-fat cheese
1/2c frozen corn
3 eggs
2tsp garlic powder
1tsp cumin
1/2c chopped fresh cilantro

Instructions:
Cook quinoa in 1c water, bring to a boil, reduce heat & simmer 20 min. Let cool.
Mix all ingredients together in a bowl. Spoon into greased mini muffin tin (or regular muffin tin) and fill cups full. Bake in preheated oven at 350* for 18-20 min for mini muffins (25-30 for large) until edges turn light brown. Serve with salsa for dipping! Enjoy!
